Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. 據 Jayson 師傅分享,繼四季龍景軒陳恩德師傅推出鮑魚酥,鮑魚酥便席捲香港高級中菜,不同的師傅各施絕技,而這裡的 南非乾鮑魚酥 則是用上原隻50頭南非乾鮑魚製作,口味份外濃郁,配合雞髀菇粒、雞肉粒、羊肚菌、甘筍粒及酥脆撻身,滋味豐富美好~

接著是帶來滿滿幸福感的萬豪金殿獻萃:建議先吃小巧可愛的 鹵水釀墨魚,啟迪自潮州打冷的墨魚中,巧妙釀入甜酸菜,味道口感一流;然後再來外層略帶焦香、中間肥美豐腴的 萬豪貴妃叉燒,肉味香濃又帶蜜香,滋味極佳。還好來了兩片,一片我是無論如何都不夠喉!

第三款是靈感源自茶餐廳鮮油多士的 乳豬三文治,不同是外邊清脆動人的變成了乳豬皮,而中間則是威化薄片及伴有花椒粉及忌廉的自製鵝肝醬,外邊並加上清新青檸皮,為這個邪惡變奏版帶來一絲清新氣息~

魚湯也是高級中菜必修科,Jayson 師傅特別以鹹淡水魚同煲,再加入花甲來提煉出既鮮又甜,帶海洋氣息而且口感醇滑的 艇皇花膠鮮魚湯;而鮮甜湯中還加入花膠、大虎蝦乾、蜆及美味的素千層,美味得令人一口也不忍喝/吃剩!

琵琶蝦大家都吃過,豬琶蝦又試過沒有?此蝦與豬扒同音,樣子也真有點「豬扒」,但肉質鮮甜爽口更勝龍蝦。師傅將之用油熨至溏心熟後放在蒸蛋上,加上含有藏紅花和雞湯的醬汁,上菜時再灑上烏魚子碎,更添鹹香,就成了名菜 金影玉玲瓏,完美演釋粵菜「清、爽、鮮、嫩、脆」的幾大要素。

也是出於對傳統粵菜的尊重,接下來的 珍菌農圃雞,師傅選擇原隻雞連雞雜呈上。農圃雞是香港本地走地雞,由圖可見皮薄不肥,肉嫩味濃,連內臟特別是雞肝也非常好吃!同上的野菌除了為雞隻提香,本身在吸收雞油雞香後,也成無上珍品,大家不要錯過。

已經很飽了,但 Jayson 師傅獨家創作的 八珍醬方肉,用上了甜魔媽媽最愛的薑醋元素,還加了蕎頭絲及紅桑子乾,滋味動人;五花腩本身又鬆化甘香,還綴上一片精緻的法式樹葉脆餅,怎捨得將之吃剩?

單尾是 酸麻湯鴨絲薯粉,黃湯酸香、麻香、肉香交錯,湯中薯絲又爽滑入味,味道扣人心弦,吃了大半碗才想起自己已經很飽、太飽!

當晚甜品是 怡香玉露,呈現黑白太極圖案的甜品,原來是加入芒果果粒的糯米漿,面層加上竹炭粉點綴,吃前可加入脆米,與泰式芒果糯米飯有異曲同工之妙,效果出奇地匹配並美味,不得不由衷地佩服 Jayson 師傅的創意!喜歡精緻粵菜的朋友,值得一去再去。

最後,這晚也感謝侍酒師 William 為這晚的佳餚配上相應的美酒。無論是一起首的 Taittinger 香檳,還是最後出奇不意地以 late harvest 的 Riesling 甜酒配酸麻湯/甜品,組合都充滿火花及驚喜,好酒之徒來訪要記著找他~
