又到一月一度食鄉下菜解解饞嘅日子,當然都係去返屋企人最愛去嘅湘川滬除上海菜外,仲有兩湖、四川等多地名菜選擇,甜酸麻辣皆全,正適合親朋戚友大圍飯聚。上海人習慣正餐前先點冷盤作前菜,是日心水係陳醋黃瓜。新鮮爽脆,甜中帶酸,潮濕天氣食用更醒胃消暑。上海菜多以糖醋醬油簡單調味,烹調方式以燘煮燉為主,無咁熱氣油膩。糖醋排骨係常見家常菜之一,香甜惹味好送飯。選用豬扒部位,肉質厚身而鮮嫩鬆軟、老人家都咬得開,而且大部份肉件都不帶骨推薦一試。因為不愛榨菜味道,所以揀咗具湖南風味嘅酸豆角肉末。酸豆角味道似酸菜,但口感更脆更有質感;肉末肥瘦參半,顆粒大有咬口,無絲毫油膩感。叉子燒餅今次燒得啱啱好,面頭酥脆又帶濃郁芝麻香,同時又有麵餅嘅煙韌。填滿肉末餡食落非常有滿足感夏天無胃口食飯,食燒餅當正餐香得嚟有飽足感,啱哂。媽咪最愛嘅上海名菜——崧子黃花魚,怕噎骨又想食魚人士必選,魚身炸成香口,配以糖醋汁酸甜開胃,啖啖肉。原條上枱後店員會當面切開分成小件方便食用,一切開就聞到強烈嘅海鮮味。外皮香脆,內裡肉嫩,層次豐富,調味加上油炸製法完美辟去魚腥味,無骨、連魚頭都食得。忍唔住食完一舊又一舊,食極都唔夠喉,如果再厚肉
