蕃茄仔在九龍灣的分店, 一到午市人流就絡繹不絕, 儘管價錢並非相當便宜, 但憑着其十年如一日的鮮茄湯底, 就能流得住附近白領的胃, 的確其銅鑼灣和這裏的店, 湯底水準平均, 沒有失手, 知道它已在新蒲崗開第三間店, 希望有機會品嚐, 看看有沒有差. 味道鮮甜, 果酸度平衡之餘, 也能做到突出肉香的效果. 濃湯質感不會過嚟於水狀, 也不會變得如蕃茄醬般過厚, 質感平衡.一路都在尋找這湯底最適合配什麼肉, 試過豬肉和牛肉, 今次配煎鴨胸反而感覺最好, 煎香鴨胸油香濃烈, 和湯底的平衡酸甜和質感, 結合起來效果最好. 鴨肉酥香, 肉質軟實相間, 微微的粉紅色和湯底的鮮紅營造了一種層次, 連視覺配搭也夠好. 用上芋絲不太吸汁和掛汁, 但其健康也是補償了煎鴨胸的邪惡感.The soup base of Red Object is really stable and not different in different stores. The soup base of Red Object is really stable and not different in different stores. The texture and taste are so balanced and it makes the pan fried duck breast better in flavour. The duck breast is so strong in aroma and soft that is not expected. Really nice but guilt.
