🔹香蔥山椒叉燒拉麵 $138
湯底是拉麵是否好吃的關鍵,這裏湯底由豬骨、雞及大量蔬菜熬成,呢碗同一般嘅濃湯唔同,口味傾向中式少少。香蔥山椒味道其實有點難想像的。會覺我有點點辣味,但因為香蔥山椒唔係麻辣所以係截然不同。入口依然順滑。

拉麵煙韌度真係唔錯,食得出麵嘅密度幾高,口感仲係彈牙放湯後,唔會好易發脹。勁欣賞細嚼慢嚥後散發出陣陣麥香,故口感不會過韌且帶淡淡麥香。

 配料方面既溫泉蛋🥚 同叉燒🐽好緊要架個地位!自家製叉燒肥瘦適中,有點炙邊不過不失,但肉質相對煙韌有咬口,比較薄切了一點...

🔹豚鴨沾麵 $168
兩麵分別沾麵麵條較粗,有嚼勁。拉麵及沾麵的粗幼大小不同,點解要粗D,因為咁先掛湯力強。麵條的質感煙韌厚實同坊間吃到的真係好唔同!最大分別就係個種煙韌富口感。

講講佢嘅湯底啦,「用上鴨肉、鴨骨、雞、蜆、菇等材料熬煮再撞鰹魚乾精華湯」我麵睇下本Menukb講下咁,好像成碗野只係比醬油味鹹少少,但食完加湯飲埋都唔會太鹹。算係濃淡得宜。沾麵香濃而不油膩,足見真材實料,相信貴在個沾麵汁吧!湯底唔太稀,都可以掛到下D麵條。係有油脂係面層,不過麵算鮮甜...唔錯唔錯!

豚鴨沾麵,但豚鴨味就顯然很弱,好像鰹魚味重,沾汁內的鴨肉份量稀少,似乎只用來熬湯汁。有點點落差呢個位,但論味道係好好食既。而溏心蛋相當出色,令我心動, 蛋上枱都仲保持到流心好正!半熟蛋蛋黃很晶瑩,蛋白和蛋黄白黃分明...配埋個湯食落去好甜好滑溜。

東京開業廿多年的【多賀野】,是當地傳奇拉麵店,雖然位於住宅區,只有一間店,但長年人龍不絕,其實好難想像當初拉麵店只賣一款招牌醬油拉麵,逐漸研發出豚鴨沾麵、芝麻辛辣拉麵等款式,同樣大受歡迎。

仲要係屬家庭式經營,每天只售一百五十碗麵,賣完即止。呢份由細細間演變到過江既歷程真係唔可以睇少,多年來列為日本最優秀拉麵排行榜頭十位內又係連續四年米芝蓮推介的日本菜餐廳!!一眾拉麵迷必定不可錯過啊。
