拉麵的製作過程非常講究,採用四種不同的日本專業麵粉,經過一夜的發酵,使得麵條煙韌有嚼勁,細嚼慢嚥後散髮出陣陣麥香


首先來的是經典的多賀野醬油拉麵,湯底選用雞、豚、鰹魚等優質食材熬制而成,層次豐富,口感濃郁


湯底清澈不油膩,醬油味濃郁,帶有淡淡的麥香
拉麵彈牙,鋪著兩片半肥瘦的叉燒,肉質柔軟多汁,叉燒肉嫩滑多汁

麵條 (4/5) - 麵方面係有驚喜,佢係用中細麵,有加全粒小麥粉,麵味充足,驚艷到我嘅係麵條非常的爽口,我認為非常唔錯。

另外一提,除左碗麵本身我認為麻麻地之外,有一樣野我係比較唔滿意,就係個燈光。成間店都偏暗,而所有位都冇刻意加盞燈去照明,令到影相偏暗,光用肉眼睇都覺得睇得唔夠清楚,連d麵有用全粒小麥粉我都係睇相先察覺到。單單係影相唔靚,响而家d名店 setting 來講非常蝕底,成件事變得唔 IGable.

另外想講講個調味架,一般來講,好多拉麵店嘅 bar 枱位都係每張個位有一 set,而咁啱我個位係冇的,要開口問先有。而,d調味料之一,係選用左七味粉,我認為有心思嘅拉麵店應該係要用一味粉,因為七味粉除左辣味,仲有其他味道,會容易破壞個味道平衡。我正正加左七味粉之後,我就覺得味道失衡,但可能係我重手左都唔定。

值得一讚係,調味架上個醬油,佢有貫徹”無化調”嘅宗旨,選用左食唔出有加味精嘅醬油,雖然個湯本身夠鹹,但我都刻意額外試左幾滴個醬油去核實呢件事,所以都值得一提。

最後,我都係清晒。順帶一提,個碗嘅設計同一蘭有類似嘅點子,碗底有一句意思類近嘅句子,大概都係話:最後一滴湯令人超滿足。不過,一蘭係比到呢個感覺我,呢道就講真冇。

Other Info. : 我比服務滿分,因為店員係有殷勸地招呼我,有求必應。縱使間店嘅運作有缺點,例如冇 QR code 落單,埋單要叫人來埋而唔係出去櫃檯(比較慢),同我以上提到,我個位冇調味架,全間店偏暗,全部都唔關店員事,都係店長或總公司嘅問題。

麵到了!! 個湯好香好濃,蟹味好足,啲麵因為係製麵機整,唔係叫貨,所以比較一般既拉麵會偏硬身少少,我自己覺得都彈牙,口感幾好👍👍
仲有果份炸蟹,好大隻,炸得幾脆,唔會勁多炸漿。配埋半隻糖心蛋,我一個人係食唔哂成個麵😂 食到最後覺得有少少膩😂不過我整體覺得幾好食。

見個個都大讚呢間拉麵,決定去試下 。估唔到,非常普通,無乜驚喜 。我地2人叫左碗 多賀野醬油拉麵,另外一碗沾麵,同埋呢到最好出嘅自家製蟹肉薯餅,仲叫左支綠茶汽水 。點知可能睇完食評太有期望,所以最後普通得有啲失望,整體又未到唔好食,只係真係無乜特別 。朋友碗沾麵,都係普普通通,不過不失咁 。蟹肉薯餅唔差嘅,同埋份量都算係咁 。支綠茶汽水有啲似綠茶+波子汽水嘅感覺,麻麻地,叫番波子汽水好過,哈哈 。如果行開k11 musea 想食拉麵就無乜所謂,但就唔值得排隊或者特登要過黎食。同埋都無乜必要再番黎食 。

🍽️香港过江龙餐厅一直都很多,足不出户就能吃遍全球,尤其是日式美食!日本版大众Tabelog(好像是这样读的:太碧落古)每年都会评百名店,比米xx权wei多了!还挺想弄个在香港开的百名店合集。

食物質素一般唔太差,性價比唔高,價錢比較貴,不過哩個都唔緊要啦。當幫襯下支持下香港留港消費,可惜兩次幫襯, 兩次食完野職員都扮曬野, 剛剛食完職員就放底張單話我叫左埋單,扮曬野咁迫人走,明明大把位又無人排隊。我話冇叫埋單,職員就扮曬野話同事搞錯左,跟住我話但係你地上次都係咁喎,轉頭傾理又話唔好意思同事第2日返工搞錯左,藉口大話多多,今時今日仲係咁嘅服務態度,冇生意真係自己攞嚟。睇openrice食評原來其他食客都有同樣經歷。如果好多人排隊我都體諒,但係唔明明明喺無人排隊,仲要大把位,都要趕人走。唔會再嚟。

自己好鍾意食拉麵同沾麵,有時候係唔想咁肥,所以努力克制自己。咁啱嗰陣時同男朋友行經K11 Musea,俾佢menu上面嘅蟹皇吸引咗。價錢都少貴,但尚算可接受,加上仲要係東京米芝蓮推薦沾麵店,所以就入咗去食。‣ 極上蟹皇沾麵 $188老實講,比起佢啲配料,確實佢嘅湯底真係好唔錯。沾麵湯底相當濃郁鮮甜,而且仲有啲蟹肉碎同蟹喺入邊,係幾出色,亦都足夠濃郁可以掛上麵條到。而佢啲麵條都係自家製嘅,我覺得相比起其他沾麵舖頭嘅麵餅,多賀野嘅沾麵餅比較硬身,但比較有彈性、有嚼口,口感唔錯。溏心蛋整得幾好唔錯,都好入味,但係未到好驚喜。至於主角軟殼蟹,我覺得正常發揮。正就正在冇平時放題食到嘅腥味或者霉嘅感覺,幾香口,仲可以食到蟹膏。#foodbara_hk

老實講,比起佢啲配料,確實佢嘅湯底真係好唔錯。沾麵湯底相當濃郁鮮甜,而且仲有啲蟹肉碎同蟹喺入邊,係幾出色,亦都足夠濃郁可以掛上麵條到。而佢啲麵條都係自家製嘅,我覺得相比起其他沾麵舖頭嘅麵餅,多賀野嘅沾麵餅比較硬身,但比較有彈性、有嚼口,口感唔錯。溏心蛋整得幾好唔錯,都好入味,但係未到好驚喜。至於主角軟殼蟹,我覺得正常發揮。正就正在冇平時放題食到嘅腥味或者霉嘅感覺,幾香口,仲可以食到蟹膏。

我上個星期去咗一間好有日本feel嘅地方食嘢,地方係細細地,但裝修得好似真嘅日本小店,連播嘅音樂都係日文歌,搞到我差啲以為返到東京咁。店裡面放滿咗日本裝飾,連張枱都好有質感,賣相一流。先講下佢哋嘅招牌拉麵,啊,真係太正啦!湯頭濃郁得嚟唔膩口,啖啖豚骨味,飲落去暖笠笠。麵條就算啦,挺身彈牙,好過癮!重點係,佢哋仲有個獨門秘技話你點樣食得更好,例如話唔好全部麵一次過浸湯,咁湯就唔會咁快涼。再嚟就係配料,啲叉燒切得薄薄片,唔使多啲調味都食到肉味,軟而唔爛。油菜同海帶都好清新,完美中和咗湯頭嘅濃郁。我最驚喜就係佢哋嘅煮蛋,溏心蛋做得啱啱好,蛋白柔軟,蛋黃流心,真係令人讚口不絕。總括來講,彷彿去一趟日本之旅咁,下次唔知幾時先至可以再去。如果你同我一樣鍾意日式風味,推薦你去試下!
