說到香港法餐的精美餐廳,ÉPURE 應該是很多人都熟知的一間,從 2017 年到今年連續 9 年獲得米芝蓮一星。餐廳除了典雅的室內用餐區外,還有鳥語花香的室外花園,如果天氣開始涼快,來這裡試試美味的法式下午茶也很不錯。其中最有印象的三款Sea urchin with Jerusalem artichoke and nori黑醋啫喱和紫蘇,入口先脆後軟滑,鮮甜感迸發Shima aji with nashi pear, shiso and ossietra caviar池魚刺身配上日本秋月梨和魚子醬,醬汁是由青蘋果和刁草等植物製成的Roasted Maine scallop with caviar vinaigrette and sauce marinière煎緬因帶子,配上魚子醬、三文魚籽和奶油醬汁。帶子表面金黃焦脆,內裡仍然是半熟的,搭配的奶油醬汁有不少小爆珠和三文魚籽,更添層次感。整體是非常好的fine dining體驗, 個人覺得服務與環境都是完美,約會選這裡很不錯!
