在蘭桂坊週邊地區,開設了很多特色小店,只要細心發掘,不難發現一些滄海遺珠。是日到訪的日本料理店坐落石板街與威靈頓街交界,門面不算顯眼。店內地方不大,座處難免會擠迫了少許。到訪前曾參考網上評價,食評多以海膽杯作飯餐亮點。即場翻閲餐牌,亦發覺其他海膽美饌也有不少,對於嗜吃這種名物的朋友一定雙眼發光,熱切期待。首先來一客沙律作開胃菜,這道金蘋果蟹籽沙律以日本金蘋果偷空作盛具,清甜爽口的果肉作主要食材,並以彈口的蟹籽作點綴,最後在沙律醬中放入少量芥末添加和風原素,味道不俗。精選什錦刺身內含四種款式,包括三文魚、特上吞拿魚腦天、金線魚及象拔蚌。三文魚以厚切奉上,份外有咬口,魚肉鮮香中等。特上吞拿魚腦天是特色食品,所謂腦天,是指呑拿魚天靈蓋內的肉,肉質有點似魚腩,油潤甘香。論味道確是不錯,美中不足的是刺身當中帶有少許筋。金線魚肉質柔軟細膩,輕輕燒過油香更佳。象拔蚌口感脆爽,清甜味鮮幾好吃。輪到主角海膽杯登場,杯中由十一層不同的食品構成,由上而下分別是燒白飯魚脆片、黑魚子、北海道紫海膽、沖繩海葡萄、藍鰭吞拿拖羅、三文魚子、白蝦、北海道紫海膽、松蒸蟹肉、北海道紫海膽及鮮海帶碎。在云云選料當中,筆者喜愛
