我想今時今日入住本地酒店渡假的人多了,不能外遊只好入住酒店補番數。而且酒店美食多多,有早餐,午餐,下午茶、黃昏雞尾酒、晚餐等多種組合給客人選擇。我今次都是看中這酒店有一個米芝蓮星級住宿之旅的優惠才入住,主要目的當然是試下明閣中餐廳的出品。看介紹寫道明閣在2009年已入選《米芝蓮指南香港澳門》,味道應該不錯。當晚知客引領我們穿過一條大走廊步入餐廳,座下之後待應很有禮貌問我們想喝什麼茶,隨後擺放了一份餐前小食及兩款醬料的碟子在檯面。小吃是琥珀腰果,酥脆香甜。醬料有XO醬及素豆板醬,兩款醬料都不太鹹,我在吃炒飯時用來醮上食材吃可増加食味。菜是一道一道上的,整體上菜時間合理,不會等太久或太快。明閣兩小碟--------至尊蜜汁叉燒和川汁蝦球伴芹香金菇至尊蜜汁叉燒是熱盤,叉燒厚切上層及下層的肉質腍滑,蜜汁甜度適中,可惜肉的中層有個很韌的部位,我咬不開,只好不吃那部份,想不到吃第一道菜已打了折扣。至於蝦球是冷盤,蝦肉爽口彈牙,芹香金菇做成一個心型,金菇菜口感幼嫩,一絲一絲不黏牙,金菇菜內裏又混和了紅蘿蔔絲,視覺上好看,川汁只有少許辣,適合不太吃辣的人。茶壺松茸竹笙清湯這湯用一個透明茶壺載著,可以看

茶壺松茸竹笙清湯
這湯用一個透明茶壺載著,可以看到湯的淺啡色,松茸竹笙切得很細沉在壺底,用匙羹攬拌後,混和清湯倒到杯內,一口一口慢慢喝,松茸的清香湧到鼻腔,湯清甜夠熱,飲了一杯已混身和暖。

XO醬露荀炒鮮帶子
兩大片帶子煎得剛好,帶子肉鮮甜嫩滑,露荀顏色嫩綠口感清爽,沒有渣。

鎮江醋香黑毛豬
這菜式雖然是小小的兩件黑毛豬肉,但做得十分美味,肉很腍,鎮江醋酸酸甜甜,又帶有獨特的醋香,很開胃。

濃湯鮮竹花膠浸時蔬
濃湯內放滿了枸杞菜,菜葉鮮嫩,沒有渣,想不到用枸杞菜來做這菜式,真的與別不同。鮮腐竹砌成一小塊長方型,上面放了一些花膠絲及冬菇絲,全部都吸收了濃湯的精華,整個菜蔬香濃味美。

蝦醬薑米蔥花蟹肉炒飯
一小窩上檯,聞到蝦醬的鹹香味,吃下去卻沒有太鹹的味道,蟹肉分拆成一絲絲,混合蛋絲、蔥花一起炒,飯粒金黃滿滿,不油不膩,加點XO醬吃更惹味。

蛋白杏仁茶
杏仁味香濃,蛋白綿滑,甜度適中,是一個很好味的甜品


米芝蓮的菜式總算試過了,這次吃的菜式不是十分特別,不過烹調的味道確是不錯的,整個套餐只是對叉燒不滿意,其他菜式都很好味。我最喜歡那個茶壺湯及濃湯時蔬。疫情下當然要吃好些,化悶氣為食量。
