Info:

To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

最近一年,小公主忽然間好鍾意食日式拉麵。日式傳統豚骨湯底以外,新派魚介、濃厚雞白湯、貝汁豚骨、鯛魚清湯⋯⋯全部都試過,獨愛濃稠度中度的豚骨湯底口味。屋企附近的拉麵店差不多全部食過了,趁今日放假,近近地去了德福廣場內的「Metro 豚骨 Base 」試新店。記憶中,商場內同一舖位附近之前有間「一風堂」,現在已轉為另一間餐廳;但就開了這間副線「Metro 豚骨 Base 」。只不過事實卻是:商場內同一區域的餐廳全部仍然隸屬美心集團旗下(註:香港「一風堂」只是由美心集團在香港特許專營,並非由日本直接營運)。日本店由「一風堂」及 JR 合作營運,暫時只有幾間分店,集中在東京JR 鐵路沿線幾個大站。營運方針配合趕搭車的乘客,似是速食店 ⋯⋯ 雖然在日本,即使在傳統拉麵小店或連鎖集團店吃拉麵,也不會坐很長時間。香港店作為日本以外的第一間海外姊妹店,這種接近快餐速食店的風格就更明顯。兩排U字型吧枱式座位,中間的狹窄空間並不是作為開放式拉麵廚房,只是連接後勤廚房的通道,方便店員從廚房送上拉麵。入店前,先在店外的自助販卷機揀拉麵。見到雪櫃內原來還有連湯包的包裝拉麵販售,但點解只有黑豚骨口味?除了幾款丼之

醬油豚骨拉麵($72)賣相一般,尤其是那兩件日式叉燒,以為是切片雞肉或者豬肉。湯底偏鹹,豚骨味道唔明顯。

特粗身麵條鹼水味道很重,亦欠麵粉香氣。麵質缺彈性、入口又很嚡口;如果唔係身處日本拉麵店,以為是車仔麵店的油麵。

半熟蛋的蛋黃差不多熟透了,很失望。叉燒更加難食,欠缺了日本叉燒(一般採用半肥瘦豬柳捲紥、再用每間拉麵店的自家醬汁配方浸煮而成)的脂肪及鬆軟豚肉;竟然只是一片很普通、沒有醃制浸煮的薄切豬柳。記憶中的「一風堂」也不是採用這種似是而非的日式叉燒。

加 $22 配搭煎餃子三隻及汽水一罐。餃子非煎非炸,大細不一,賣相很差。表面又舖上了過多的薑蓉蔥花,掩蓋了餃子的肉汁鮮味;咬下去餃子皮底唔香脆,餡料肉汁唔多、味道亦唔好。

煮干豚骨拉麵($78)同樣用豬骨濃湯作為基礎湯底,但加入了魚干提升味道。顏色因此變得更深、膠質及油份也更高。入口較普通豚骨湯底更鹹;魚干質素似乎並不太好,欠缺魚的鮮味,反而魚腥味幾重。

每款拉麵的配料有所不同,煮干豚骨拉麵有酸筍、蔥花及薑蓉,醬油豚骨拉麵就是蔥白絲及菠菜莖。兩款拉麵所採用的豚肉也不相同。可能要配合煮干豚骨拉麵的偏重口味湯底,選用了大大條炙豬腩肉。味道較醬油豚骨拉麵的薄切豬柳好吃一點,但烚煮時間未夠,肉質及豚脂唔夠鬆化,口感很差,及不上其他拉麵店的豬腩叉燒。

拉麵味道很差,由湯底、麵條、叉燒以至半熟蛋,冇一款食材合格、冇一款好食。固然遠遠不及近年在香港開業的個體拉麵小店或日本名牌過江龍,甚至差過印象中的「一風堂」(編按:已經有一段時間沒有光顧)。完全不能理解原因何在。雖然沒有加一服務費,但也不會再來第二次!
