係時候睇師傅大顯身手啦!先炮製白松貝 Geofuc k Clam,即是象拔蚌。見師傅分先後次序燒其不同部位,目的是掌握最佳的烹調時間。白松貝切成條狀,旁邊放了一些爽口的三色雞冠草,再配上芥末蜜糖醬,師傅就建議先品嘗原味,然後才蘸些醬料。

燒弄的時間剛剛好,口感相當爽嫩,而肉的位置就外脆內軟,很可口,正!師傅簡簡單單以牛油、白酒和胡椒調味,更能嘗到其本身的鮮味。試試蘸上芥末蜜糖醬,微辣微甜,吃出另一番味道,但個人就覺得不作添加最美味。

三隻廣島蠔都相當肥美,挾起挺墜手。師傅把其燒得外脆內嫩,時間岩岩好,完全沒有出水,讚!蠔肉鮮嫩之餘亦富有蠔汁,蠔鮮味濃,真係啖啖教人回味。再試伴着蔥花櫻花蝦炸蒜同吃,添上鹹鮮;又試蘸上和歌山刀根杮西京麵豉醬,添上甜甜地的味道,配搭新穎,也很好吃!

本來套餐是美國牛柳或西班牙豬柳,但店員推介優質的A5級和牛,那當然不能錯過。揀了日本熊本縣A5級和牛薄燒 Thin Sliced Grilled Wagyu (+$150),見其相當透薄,色澤紅潤,亦夾雜着雪花般的油脂,本擔心很肥膩,但經板燒後,迫出油份,吃起來甘香而不油膩,牛味香濃,中間捲入蔥花和炸蒜,配搭一流,且調味合宜,完全不用蘸上旁邊的竹炭鹽。A5級果然優質,啖啖教人回味!

除和牛薄燒外,還配了三式野菜,有大啡菇、蕃茄和蘆荀,全部都香煎得剛好,仍存咬口,調味亦合宜,沒有蓋了野菜的原有味道,正合我口味。特別喜歡那幾片大大塊的炸獨子蒜,香脆可口,蒜香十足,正!

總覺得鐵板上炒飯 Fried Rice 好唔簡單,是很需要技巧,但師傅三兩下手勢就把那碗熱辣辣香噴噴的炒飯送到我面前。米飯粒粒分明,炒得乾身而不油膩,加了雞蛋、蔥花、紅蘿蔔粒、洋蔥等,當然不少的多款海鮮,有帶子、蝦和蜆,每啖都好豐富,再在飯面加埋三文魚籽,鮮味爆燈,更添美味。

完美的一餐當然不能沒有甜品雪糕 Ice-cream 有四款口味選擇,分別有豆腐味、抹茶味、黑芝麻味和朱古力味,頭三款都是我所愛,好難揀呀…經一番掙扎後,還是要抹茶味。一球抹茶雪糕以清新的薄荷葉作點綴,底下還墊了些紅豆。抹茶雪糕色澤挺深,質感幼滑,嘗到啖啖抹茶的幽香,但對我這個抹茶控而言味道不算很濃郁…..加一些粉綿的紅豆伴,多份甜美,也美味。
