雖然近排天氣熱辣辣,而且陰晴不定、時晴時雨,讓人納悶非常,不過亦無損我和家人外出覓食的心情,加上剛過去的星期日是父親節,所以週末晚就交由兒子發辦,選了油麻地新開的《小肥牛蒸氣石鍋火鍋專門店》,一家人齊齊整整,提早一天慶祝父親節。近排蒸氣石鍋大行其道,筆者當然亦唔執輸,早前已經品嘗過城中好幾間石鍋專門店的蒸海鮮;反而一向以靚肥牛及靚湯底作招徠的《小肥牛》,這晚還是首次到訪。店子位於油麻地砵蘭街,地面一層地方雖然唔算好大,但勝在環境骨子企理,配上一室型格的裝潢,感覺亦蠻舒服。安座後先去近門口的海鮮檔巡一 round,海鮮的選擇非常豐富,有大連鮑、海中蝦、貴妃蚌、大魚頭、蟶子皇、番薯貝等等,款式齊全,而且每款海鮮的價格都清清楚楚,仔細地列於價目表上,一目了然。店員見我倆心大心細,提議我們不如試試「潮蒸海中寶」套餐,原來共有三款選擇,分別為美味餐 $298、精選餐 $398 及特上餐 $498,全部斷位計,而且仲會配埋前菜、鮮果拼盤及粥底,不過就要兩位起,另設加一服務費。都好喎,不用傷腦筋,啱曬我這個經常議而不決的師奶仔。既然一場來到,加上慶祝父親節,就一於食豐富啲,揀了包括有六前菜、四款海鮮

點餐後,見服務員快手快腳,先將切好的南瓜、新鮮排骨同珍珠米一同倒入石鍋裡,上面再放上蒸盤,並著我們先吃餐前小碟,然後才蒸煮海鮮。店員更教路說,等海鮮食到最尾,便可以慢慢品嘗排骨粥,如果意猶未盡的話,更可以用這粥底當作火鍋,繼續打邊爐,鮮上加鮮。

趁海鮮未到,先行混醬,餐廳當晚共有 9 款醬料提供,不過醬油有價,每位要額外收取 $15;而酸菜、花生則需每份另收 $10。至於跟餐的餐前六小碟,就分別有蟹籽沙律柚子蓮蕅、芥末八爪魚、魚翅白飯魚、丁香小魚乾及帶子裙邊。蟹籽入口卜卜脆,用來撈拌著新鮮的沙律菜吃,既清新又爽甜,是筆者心水之選。而以柚子醃製的蓮藕,咬下亦爽脆無渣,加上味道酸中帶甜,吃起來夠曬醒胃。

至於老公就對丁香小魚乾和帶子裙邊情有獨鍾,讚前者不但醃得夠入味,吃起來亦嚼頭十足,啖落更帶微微酒香、而後者帶子裙邊,入口亦爽脆好味,配埋灑上的芝麻粒吃,香味四溢!也嘗了一點魚翅白飯魚芥末八爪魚,前者配搭新鮮,而後者就煙韌得來又夠曬刺激攻鼻,令人又愛又恨!

吃過前菜後,是時候開餐了。先以阿拉斯加蟹腳和生猛大海蝦打頭陣,蟹腳外形粗壯圓潤,而且看起來甚有肉地。蒸熟後先剝殼一試,入口啖啖肉,味道清甜,而且肉質結實,食落仲超 Juicy,那種鮮甜味,與冰鮮貨相比,的確差九條街。至於以長竹籤串起的清蒸生猛大海蝦,蝦殼望落去透明兼帶光澤,而蝦肉入口亦夠曬彈牙,加上質感結實,鮮味突出,無需蘸點醬汁吃,已教人回味。

接著就輪到南非兩頭鮮鮑和日本兩頭特大元貝,南非鮑魚非常巨形,比掌心還要大,而且端上來時已經鎅曬花,賣相誘人。店員非常細心,蒸熟後還會將鮑魚代為切件,方便食用。兒子搶先挾起一試,盛讚鮑魚的味道甘香突出,食落不但爽口鮮甜、而且肉質具嚼勁,加上沒放進任何調味料,所以不會奪去鮑魚的鮮美。至於來自日本兩頭特大元貝,厚肉得來又夠大隻,蒸煮後入口剛熟又不過老,食落鮮甜彈牙,而且沒以蒜蓉粉絲伴著烹調,更能吃出原汁原味,難怪老公話食多幾隻都無問題。

吃罷海鮮,就輪到兩個牛魔至愛的安格斯牛頸脊,牛頸脊已切成薄片,望落去油花非常密集,而且片片都厚薄均勻,刀工一流。服務員細心地將牛頸脊一片片排放於鍋內代為蒸煮,揭蓋後立即一試。牛味非常濃郁,雖然肉質入口無和牛咁細嫩幼滑,但都幾鬆化,軟綿得來又夠 Juicy,蘸點醬料吃亦很惹味。

接著是沙巴龍蠆糯米飯,初頭睇餐牌見有這道菜,還以為又是以特大蒸籠盛上的貨色,估唔到原來廚師非常之有創意,將荷葉捲成雪糕筒狀,放入已經預先以臘味炒過的糯米飯,頂頭再綴以一大片沙巴龍蠆肉,造型有趣,挑起食慾。原來蒸煮時間只需 1 分鐘,勁快,立即舀出熱騰騰的糯米飯入口。飯粒質感軟糯,配上味道鹹香的臘腸和膶腸,簡直是天作之合,最重要是味道不會過鹹,加埋入口爽滑不腥的沙巴龍蠆肉,與糯米飯混在一起吃,食味豐富。

吃過多道海鮮和肉食,當然要來一點時蔬平衡一吓,端上來的什菌時蔬拼盤,非常之大堆頭,碟上除了有金菇、鮑魚菇和鮮冬菇外,還有粟米、南瓜、淮山、紫薯和芋頭等。個人最愛當然就是紫番薯和芋頭,貪前者質地實淨、勁有咬口,番薯味亦夠曬濃郁;而芋頭蒸熟後就粉腍帶芋香。另外山藥味道都唔錯,雖然吃起來有點黏口,但咬下夠爽脆。

來到最尾,當然要食番先前店員力讚的南瓜排骨粥,經過煲煮後,粥底變得非常稠身,質感吃起來有點似潮州粥,而且由於吸盡了海鮮和肉汁的精華,所以入口啖啖鮮味,加上南瓜的香甜,既飽肚又好吃。壓軸還有以冰鎮形式上桌的鮮果拼盤,上面除咗放有入口味道爽甜多汁的西瓜菠蘿外,竟然還有味道香甜的草莓雪糕泡芙,為完美的一餐作結。
