灣仔新開鮨店今日跟同事喺灣仔工作,就順便試埋呢間想食嘅新餐廳,據稱係由入行超過21年,並師承北海道米芝蓮二星廚師五十嵐信幸嘅峻師傅主理,店中所用嘅魚鮮仲由日本當地經買手在魚市場競標,矜貴食材由日本新鮮直送到港,所以特別新鮮上承Lunch Omakase 壽司十二貫$498,會有前菜、茶碗蒸、壽司、湯品及甜品先上前菜水雲菜即係海藻,入口滑潺潺帶爽口,微酸嘅調味好開胃茶碗蒸夠熱,蛋身好滑蛋味香濃,入面仲有其他配料提味到午餐主打壽司十二貫上場了墨好新鮮爽口,加入蔥粒我自己好鍾意伊佐木唔需太多調味,入口鮮甜肥美又彈牙平政魚加上竹炭喺面,油份不會過膩又鮮味帆立貝非常新鮮,我太鍾意食貝類海產了,呢件滿分,仲有紫菜喺面北海道牡丹蝦好鮮甜好膠身漿口,特別愛呢種口感北寄貝有獨特鮮甜味,又夠爽口脆身深海池魚及赤身吞拿各有千秋,一爽一腍但都帶有濃厚魚鮮味三文魚籽漬得不錯,如果塞滿再一碗都係就正了鰈魚魚邊火灸迫哂魚油脂出嚟,魚肉好甘香又滑身野生拖羅油脂超級豐富,你睇下啲紋理幾靚,好粉嫩入口即溶北海道馬糞海膽唔洗講啦,每次都好期待,新鮮鮮甜無投訴,好貪心咁諗再多啲海膽就好正仲有熱辣辣麵豉湯最後係甜品,用上日本靜
