很久以前已經聽聞拉麵Jo,雖然常常去銅鑼灣,卻一直沒機會試。第一次捧場,竟然是幫襯圓方分店。這兒前身是拉麵一平安,間隔分斷左右兩邊,有點搞笑。我們被安排坐在路邊的一檯,因為毫無遮擋,感覺沒有安全感。第一碟端來的是蔥花牛舌,$62大約有八片,薄切的牛舌經過烤製,上面鋪了黑椒和薑蓉,入口令人聯想港式燒味的味道。不過,雖然是薄切,口感卻比較韌。個人喜歡沾麵多於拉麵,人生第一碗沾麵是在高田馬場的やすべえ嚐的,那次之後,就像動物把第一眼見到的活物認定為媽媽一樣,很想找回那份感動。這兒的沾麵湯底入口比較酸,柴魚粉巧妙地調整了湯汁的鹹甜度。如果鹹味減一分,甜味多一分,那就跟回憶中的味道很接近了。粗扁的麵身有點軟,荀干和叉燒粒都充分吸收了湯汁的味道。手包餃子很重韮菜味,個人不太喜歡。餃皮薄薄的,底部煎至薄脆,味道不差但始終稍欠個人特色。近期最喜歡的還是三田製麵所的三田流煎餃,那種味道,才有令人翻尋味的衝動。豚骨拉麵的顏色很淡,麵色偏白,幼身直直的,掛湯力較弱。湯身顏色同樣很淡,表面有薄薄的油層,比較像鳥華的雞湯底。叉燒不是條狀也不是圓形,薄切不規則的一片,半肥半瘦,口感硬了一點。麵身反而腍嫩,如果可以
