牛頭角下邨拆卸重建,附近商場以牛下懷舊主題打造商場,除咗有小店外,更組成懷舊小食FOOD COURT,名為得米小食檔,當中有各式小店,主要售賣街頭小食,重拾舊日牛下風釆。 五香牛雜(細)$20牛雜用舊式明爐一路煮一路賣,離遠都聞到八角等香料味,突然間好肚餓,牛雜除咗湯底夠味,亦炆得夠時間入晒味,腍滑有嚼口,直頭係以前牛下牛雜麵嘅味道,將小小一碗歷史同回憶,食落肚記入心,意猶未盡,再試另一樣「賣飛佛」 腸粉$10/4條最簡單嘅街頭小食,好味與否,視乎一點點細節。先用一小匙豬油均勻搽滿臘紙,一定要係豬油,先會有獨一無二嘅油香,再準備稀釋嘅麻醬、豉油同大量芝麻灑上面,我喜歡加埋甜醬,試第一件,就知跟足上述舊式做法,淡口無味嘅腸粉係媒介,揉合醬料配料成為整體,入口甜鹹芝麻香一齊爆發,就係腸粉令人夢縈魂牽嘅魔力。樂見商人將食肆加人本土原素,社區除咗要更新,亦不應忽略保留特色,食嘢除咗要好味,亦好應該保留人情味。
