筆者兩夫婦在香港區長大,搬到九龍之前,每次過海,一般只會出沒於油尖旺、新界的郊野公園、或者元朗 / 西貢等等遊客地區,又或者每逢過年過節,才會到訪各大公共屋村探親拜年;所以,直至牛頭角下邨清拆重建,一直沒有機會到訪邨內特色街坊食肆,對牛下的認識也只限於「牛下女車神」。大概三年前吧,得寶商場將其中一角重新裝修,打造成「牛下新城」,但一直沒有到訪,今日在淘大睇完電影,專程一探究竟。對比毗鄰的淘大商場,得寶商場的裝修及營運明顯給比下去,面積較細只是原因之一,根源問題卻是業權。淘大商場仍然由某大地產集團作為大業主,單一管理,當然可以定期翻新;得寶商場業權分散,小業主們當然不願作出大規模投資翻新得寶。難得2016年初,小業主們(或管理公司)決定用有限資源及最少金錢,為商場注入牛頭角下邨元素,希望吸引人流。翻新後的商場設計可以用「蔗渣價錢、重現香港舊情懷」去形容:基本配套及佈局沒有太大改變,只是在裝修風格上添加特色,並在細微處突顯「牛下新城」的概念。與其他開業多年、由大集團管理的大型商場,花費大量金錢重新裝修、打造成追上潮流的商場,是兩種截然不同的策略。從另一個角度來看,「牛下新城」是為了生存,大

有別於今時今日美食廣場內的小餐廳,全部都有正規廚房;這些小食檔只有簡陋的開放式廚房,所以,也只能夠提供簡單小食。座位區的裝修同樣顯得簡陋,但注入了大量當年屋邨地舗特色:鐵皮信箱、紙皮石鋪砌的地下、一個個裝玻璃啤酒樽的大膠箱(屋邨內的大排檔)等等。

據講,「八座小食」真是當年牛頭角下邨第八座的其中一檔地舖,牛下清拆後才搬入得寶商場,繼續主打各款港式街頭小食,由雞蛋仔、碗仔翅、魚肉燒賣到牛雜等等全部有齊,而且更是街頭推車檔價錢,最便宜的雞肉腸 $5/串、最貴的牛雜湯油麵也只是 $35。

唔知道什麼原因,其他小食檔的廚房已經燈光暗淡,但「八座小食」更加幽暗;很擔心員工如何處理食物,衛生情況是否理想。檔口前一列排開五枝膠樽醬料豉油、甜醬、麻醬、辣椒醬及熟油;1970~80年代或以前的典型街邊推車檔就是採用這種形式,任由客人按個人喜好自行「吱」醬料。

小食檔前有一格格不鏽鋼箱,其中一個內裡裝著大量豬腸粉,下面則是另一個裝滿水的不鏽鋼箱,再下面就是明火爐頭;一個簡單設計,就可以製造大量循環再用、不會蒸發走水的土炮蒸爐,有效保持豬腸粉熱辣辣。已經很難找到一條條、圓轆轆、豬腸形狀的腸粉($10 / 4條),開口落單之後,說時遲那時快,剛剛取起相機準備拍照,已經剪起一碟豬腸粉 ⋯⋯ 非常傳統的豬腸粉食法:膠碟上舖一張白色臘紙、吱熟油、然後放上豬腸粉,之後也不會詢問客人要求,已經落齊豉油、甜醬、麻醬,最後就是芝麻。如果嫌甜醬、麻醬唔夠多,自己吱。

豬腸粉從來都是厚身、唔滑溜,因為賣點正正是米漿夠稠身、腸粉夠結實,差不多等於食白飯,食4 條已差不多可以填飽肚子;某程度反映了 1970~80年代之前香港社會尚未富裕,大部份市民對小吃零食的要求只求飽肚,味道可以用醬料「搭夠」。

另一格沒有蓋的不鏽鋼箱則載滿了鴨肉湯底碗仔翅($20)。眾所周知(90後一群唔肯定),碗仔翅並非真係魚翅,甚至一丁點魚蝦蟹成份皆沒有。材料只有粉絲(半透明模仿魚翅)、瘦肉絲、木耳絲及冬菇絲,加入澱粉將湯底煮至稠身,再用生抽調味、老抽校色;模仿老雞、瑤柱、金華火腿、豬骨熬煮的金華火腿上湯,顏色及稀稠度真的有七分相似。小食檔標明採用鴨肉煮湯底,唔知道真定假,但味道就完全唔覺得有任何鴨香及鴨臊,當然更加不能夠與金華火腿上湯的鮮、鹹、甘、香媲美;總括來說,只得一個鹹字及少少肉味。只不過,材料又的確非常豐富,啖啖都有肉絲、木耳及冬菇,口感非常充實,要填飽肚子也有相當實際作用。

雖然已過了兩個月,既然尋回當日影的這幾張相就特地寫這編食評。這日去完九龍灣的運動博覽,雖然也有收獲但比預期略為失望,就提早離開到這裡覓食。附近的佈置都好懷舊特色,值得在此慢慢拍照。來到此店二話不說便叫了個五香牛雜(大)五香牛雜,香味撲鼻,聞到已食指大動。味道濃郁,食落軟腍。牛腸及蘿蔔最好味! 附近還有好多懷舊小食,我們也食了不少。

發現入面有一個美食廣場之類嘅野所以試咗一試

我就試咗幾間,其中最值得一提嘅係呢間臭豆腐

開頭都唔知有,不過有個阿姐係咁叫賣先知


佢比起其他臭豆腐聞落唔夠臭,不過食落去味道更加突出~~太有驚喜~~

另外仲嚮呢間食咗豬腸粉,比起街邊車仔賣嘅感覺更加衛生

最近在報紙上見到九龍灣得寶商場開左間八座小食,原來就係當年牛頭角下邨既小食檔搬左過黎咁我就決定係星期日黎試下當我一黎到得寶商場就覺得呢到充滿懷舊既氣氛再行入去得就見到裡面有個美食廣場 裡有我要試既八座小食去到我見到好多牛下懷舊小食 有五香牛雜、臭豆腐、崩大碗、港式鹵味同埋招牌菜八座沙嗲魚旦 今日我就決定要試晒佢 五香牛雜 聞到就已經流晒口水啦食落味到非常濃郁 咬落又唔韌臭豆腐 雖然冇出面咁臭但食落味道同當年沒有分別 外脆 豆腐又夠滑崩大碗係出面好少見既涼茶 呢到整得比較濃 果然係落足料港式鹵味就非常爽口最後就八座沙嗲魚旦有好香既沙嗲香味 食落有少少辣但又搶唔到沙嗲既味道 食完後令我想起好多童年回憶 真係重現返當年牛下既味道

崩大碗係出面好少見既涼茶 呢到整得比較濃 果然係落足料
港式鹵味就非常爽口
最後就八座沙嗲魚旦有好香既沙嗲香味 食落有少少辣但又搶唔到沙嗲既味道 食完後令我想起好多童年回憶 真係重現返當年牛下既味道

新開張時喺度買過碗大牛雜,叫阿姐唔好俾咁多蘿蔔,佢話蘿蔔係送嘅,唔計錢;我叫佢俾兩件我就夠,點知坐低食時發現一件都冇;講返味道...話係以前牛下貨色,但食落完全係兩回事,冇下次(牛雜)。今晚去買外賣,試佢個韮菜豬紅豬腸,哥仔話唔夠韮菜溝啲生菜俾我,ok np,我最想食都係豬腸啫,見佢俾咗好多豬紅,但因為等佢整嘅時候我視線離開過,所以都不以為意,直到食嘅時候就知唔妥,面頭係豬紅,中間係豬紅,底下係幾條仔韮菜同幾條生菜,"我啲豬腸去咗邊呀?"WTX,攪乜呀?整體味道偏淡,$25一碗咁嘅生菜豬紅,佢真係賺到笑,下次都係行多幾步返利基嗰邊買好過。
