幾道頭盤之中,最喜歡醉雞,帶有芳香的酒味,雞肉嫩滑.

近年環保主義抬頭,一些環保份子,站在道德高地,大力反對吃魚翅.我們也順應大氣候,一來為自然生態出一分力,二來現今飲食選擇眾多,也不一定吃魚翅,來個燉湯一樣得.這一夜的黑松露燕窩羹,每一口都是黑松露之香氣,粒粒燕窩真材實料,湯身恰到好處,不是太過杰.果然是吃燕子口水尾,也吃得滋味.

賀年菜式當中,其中一道最喜歡的菜式,是瑤柱甫蒜子扒生菜,粒粒肥大肉厚的瑤柱,浸到軟稔的蒜子,連同濃惹的醬汁,與生菜一起吃,實在滿足.

鮑片鵝掌也有水準,鮑片爽中帶稔,用來扣鮑片的醬汁濃惹,鵝掌同樣地入味,底下的小棠菜,對它興趣一向不大.

常說現今很難吃到皮脆肉嫩的炸子雞,今趟吃到的炸子雞,皮脆肉嫩不特止,更帶有雞味.絕對值得一讚.

在飲宴上,經常吃到蒸魚,基本上吃到沒有新意,最吸引的是碟上的豉油,一出場自然叫碗白飯來伴.十多人一圍的飯局,海班的份量亦比平日所見的大條,蒸得夠火喉,肉質鮮嫩,但魚味不彰,此是大魚之通病.

用雲吞扒豆苗,對我們是一個新嘗試.每一粒雲吞包得圓潤飽滿,內裏餡料以蝦為主,入口爽滑有鮮味,雲吞底下的豆苗,名乎其實湯甜菜滑.蛋白蟹子炒飯,乾身得來入口卜卜脆,脆口感覺源自蟹子.蝦球窩麵用上粗麵,沒有鹼水味,伴以爽甜的大大隻蝦球,兩個字:好吃.

事先友人已提大家,是夜的菜式絕對夠大家吃,不用打底,結果,大家吃到很飽了,未算,還有結尾的甜品正等著我們,芒果布甸極之精彩.又香又滑,是近年吃過之中,最好吃的芒果布甸.另一款杏仁茶湯圓則不過不失,我嫌杏味不夠強.

一年由順德聯誼之始,由帝苑軒的盛宴終結,好頭好尾,有始有終,一班人熱烈地彈琴熱烈地唱,歌聲多奔放個個喜氣洋洋.
