To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

終於等到可以8人一檯去吃晚餐了!剛好帝京酒店有間全新概念的餐廳獅房菜,正好大伙兒去吃頓快樂的生日晚餐。新餐廳獅房菜 Lion Rock由經驗豐富的區域中式廚藝總監江肇祺師傅主理,連同經驗豐富的團隊譚詠儀師傅、張嘉豪師傅等一起打造千變萬化中西融合的精緻美饌。這天來品嚐*獅房發辨‧金榜*品嚐菜單,當中共有九道別緻佳餚每道菜式也盡顯獅子山下的味道,未開席前侍應先送來餐前小食給我們開胃,當中包括有爽脆的麻香海蜇、麻辣秋葵和香脆琥珀合桃。第一道菜*卉扣*以薑醋作主題弄出仙境般的賣相,啡色玫瑰用上薑醋啫喱捲成花形,內裡還有薑粒吃下口感Q彈味道酸香醇厚,另一朵玫瑰是以雪梨片、青瓜片及櫻桃蘿蔔捲成,用了椰子醋浸泡吃下帶上幽幽椰子清香好清新,別忘記中間那可愛嬌小的薑醋鵪鶉蛋喔!第二道菜是*劦煎*劦讀音協乃合力之意思,此菜以鮮甜松葉蟹配濃香北海道3.6牛乳合力炮製而成,再放於以竹笙炸成的脆盞上一口吃下香脆鮮嫩共冶一爐層次很豐富。緊接著是一客湯品*鱻煲*鱻讀音鮮乃新鮮的意思,活像灌湯餃的賣相但師傅則用上了酸菜魚湯底,另用鯛魚作餃配上矜貴的松茸口味好有新意。第四道菜*犇炒*是M5和牛的菜式,犇讀音為奔乃眾牛奔

第四道菜*犇炒*是M5和牛的菜式,犇讀音為奔乃眾牛奔走之意,吃不了牛的我就交給大廚發辦為我轉成貌美如花的烤乳豬盞。

烤乳豬盞最特別之處是那口盞!大家看見嘛脆盞是乳豬皮來精造的手藝真叫人拜服,而盞內當然還有乳豬肉面層更配上花型蝴蝶餅,襯上芥末、乳豬醬及辣醬一起品嚐實在妙哉。

然後上檯的是*淼燴* 淼讀音為秒相信大家最為熟悉吧!其意思是水流廣大的樣子,這個以珍貴的黑虎掌配合青椒、淮山來爆炒以山葵調味,再配合那個以人手逐片貼成的杏仁盞,成件事也是心機之作真要好好細味。

來到第六道菜是*皛煮*皛讀音為擾有潔白明亮的意思,來形容野生竹笙真的非常合適,營養豐富的野生竹笙內包裹著羊肚菌等香氣撲鼻的食材,那爽滑口感加清新菌香確惹人憐愛。

這個可愛版乞兒鵪鶉大名叫*雥烤* 雥讀音為什帶群鳥的意思所以我們有鵪鶉吃,大廚用上曲奇餅皮作外衣包裹著的式糯米鵪鶉,除了荷葉裡裡外外也能放入嘴巴品嚐。

來到尾聲甜品*馫凍* 馫讀音為馨是芳香四溢的意思,以師傅消夜的牛丸河作藍本製作出這個椰汁桂圓甜品,清甜的桂圓果凍配滑捋捋的椰汁河粉味道不太甜好吸引真有心思。
