日本菜一向都唔會差得去邊, 而今次去食既呢間亦不負我所望。道鮨既OMAKASE絕對在質素同質量上都有保證。我地由八點半食到十一點, 當晚食OMAKASE既客人唔算多, 整體感覺唔錯, 全程都不斷有同料理人互動, 除左聽佢地講解菜式之外, 仲同食客一路有講有笑。首先, 前菜係高野豆腐,螢光魷魚同日本菠菜,魷魚好彈牙,豆腐口感好奇妙,好似海綿一樣。 跟住落黎就係食刺身, 第一道菜係真鯛背同真鯛腩, 個人認為背位比較好食同爽口。 第二道菜係新鲜赤貝, 師傅首先將赤貝拍一拍, 令佢神經收緊, 口感會更爽口同彈牙,另外, 裙邊位就連埋青瓜絲一齊上, 鮮味好足同好爽口。 第三道菜係醬油煮八爪魚用自家製醬油煮成的八爪魚, 偏甜的醬油中和左八爪魚本新的海水味。 之後就係北海道牡丹蝦,用蝦肉將蝦膏包實再串起, 味道超濃郁, 仲有蝦頭肉同埋炸蝦腳, 所有食材都無浪費到。 食完刺身之後就係壽司環節啦, 第一味係甲魷魚配薑蓉,然後就係左口魚壽司兩件壽司都不過不失。 第三味係青柳貝貝柱同裙邊好爽口, 不過好重海水味。 跟著呢味係用醋鹽醃製的小肌魚鹽味比較重。 最後係鰈鮫魚壽司魚味比較淡, 用黎做最後一味壽司剛剛

師傅先將大拖羅起筋再切成魚蓉, 然後放在中拖羅壽司上面, 令我一次過食到大拖羅的肥美同中拖羅的口感。 食完咁多樣野啦, 師傅就準備左個清湯比我暖下個胃, 好細口的安排, 再加上現埸即刨鰹魚絲同自家製昆布鹽
