To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

近年流行食川菜,那川菜館是否只食麻辣火鍋咁簡單,今天早利亞跟友人就來到中環一間樓上舖瘋狂小面,試試四川當地的民間食品,午市多人,特意2點後才到,避開人潮。店子午市有午餐組合: (A) 麵食、(B) 飲品、(C) 小吃 (D) 甜品 ,不同配搭,最低消費 A+B $78,而全套餐A+B+C+D 價錢為$98,另加一服務費。點了兩個瘋狂套餐,所謂小麵,就是四川地道的麵,有著蔥蒜醬醋辣椒調味的麻辣麵,分為乾撈和湯麵,我們各點一份。心中首選瘋狂燒白肉麵,可惜每天限量供應十五份,店員表示開店未到一小時便售罄,可惜,唯有改為同是豬肉的大排麵。因為很想試特別推介的鐘水餃及棒棒雞,我們選擇了加錢升級小食。鐘水餃 造型比一般水餃小巧,皮煙煙靱靱,原來店子特別請麵廠特製的,香滑而豬肉餡料有肉味,雖然紅油望落有點嚇人,但辣味不重,加埋蒜香,味道層次豐富 ,我們吃著一隻接一隻。另一款小食棒棒雞,雞肉片不算多,醬汁味道帶點酸味,原來這是當地正宗味道,蠻特別。店員端上甜點醪糟粉子及成都老冰粉,奇怪,主食都未到,細問下原來當地人地道食法是以此作飲品,用以解辣,因甜味可以紓緩麻辣既感覺,但來到香港後才作甜品,另加飲品

瘋狂豌雜面,店員叮囑影相後要快食,而且要撈得均勻才最好食。豌豆蓉跟肉醬蔥花,還有麵底部放了師傅自家炒的雜醬,邊撈邊聞到香氣撲鼻,入口香麻但不太辣,或許因為我們點BB辣的關係,豌豆蓉跟肉醬很夾,口感豐富,惹味而不油膩。

另一碗湯麵瘋狂大排面,配有多件鹵水的排骨,我另加了店子馳名的肥腸,師傅細心剪開肥腸,取走內裡肥膏及污物,店員表示這是成都的標準,香港坊間少見的處理方法,算是這兒特色之一,入口一樣有肥腸的脂香,鹵得入味爽口,一吃愛上。麻辣湯底與坊間麻辣米線不同,重點不在於辣,重於麻香而不嗆喉。餐廳用的麵是四川的水麵,專門在本地麵廠訂製,質感有點像拉麵,煙韌、爽滑之外,掛湯能力又高,跟湯底同吃很痛快。

最後真是要食甜品解一解辣及油膩感,醪糟粉子跟酒釀丸子相似,粉丸子口感煙韌有咬口。成都老冰粉是傳統的口味,口感像啫喱,配上糯米、提子乾、芝麻、花生等配料,口感清爽,加上配料味道層次豐富,是這餐的亮點。
