Restaurant: La Parole

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 作為老闆的你,打開門做生意當然想賺錢,如果,將所有開支扣除後,利潤全數用作做慈善,大家會否覺得,這個老闆嫌錢腥麼?上環柏廷坊La Parole,是政府認可的社會企業,撇除開支之後,賺得的所有,便捐贈去非牟利機構,Benji庭恩兒童中心,以幫助一些低下階層,有語障的小朋友,為他們提供言語治療。這種無私奉獻的高尚情操,在唯利是圖的香港地,已經成為稀有品種了。早前餐廳在晚餐時段推出的菜單,現今更會加推在周末日午市,價錢近乎賣大包,只是$300一位,便有六道菜,一切由廚師發辦。這個下午,由C先生安排下,得以來品嚐這六道廚師發辦的菜單,當表明個人的飲食習慣後,然後便安心交給廚師安排。頭盤為Scallops in Fresh and Sweety Salad in Chardonnay Vinegar,此帶子來自北海道,只是略略烤過表面,帶子肉質鮮甜而柔軟,配以沙律,與帶酸甜味的dressing,清新可人。二道菜是Lobster Bisque,特別之處是湯汁與湯料另上,待盛著湯料上桌之後,侍者才將湯汁注入湯碟內。材料甚足,龍蝦肉厚爽甜,麵包粒添上脆口感,但我覺得龍蝦湯的味道,略為苦了一點。聽說這裡

聽說這裡的法藉大廚,處理鵝肝鴨肝有一手,Pan Fried Foie Gras in Two Taster of Raspberry,Foie Gras甘香嫩滑,沒有出現過火位的情況,兩種不同感覺的Raspberry,酸甜味同樣可中和鵝肝的肥膩。

La Parole不是甚麼高級餐廳,在六道菜頭盤與主菜之間,一樣有青檸雪葩,來給客人來清一清味蕾,是一個驚喜的細心位。

Pan Fried Lobster、Mashed Celeri & Carrot with Gravy Lobster Sauce,用上肉厚的波士頓龍蝦,味道新鮮爽甜,以芹菜根,蘿蔔打成茸,感覺與薯茸一樣地細滑,而且更清新,沒有膩感。

紅肉的主菜是Rolls of Lamb Fillet with Truffle Sauce,可說是頗為複雜的一道主菜,以酥皮卷著羊肉,原理有點像威靈頓牛柳,羊肉欠了騷香,幸好還有肉香,質感嫩滑,內裡更包著一些香菜,而且松露味突出,所以吃下去的感覺挺有層次。

結尾的Strawberry in Red Wine with Beaten Eggs,還有一杯Leonidas的朱古力,可能我要杯凍朱古力,所以味道不夠濃。

其實客人來到這裡用膳,心情應該很愉快,既滿足口福之慾,亦可以做善事,為弱勢社群的孩子出一分力,一舉兩得,何樂而不為?
