大家有看過鐡金剛的電影嗎?充滿神秘感的場景,作為開場的調子,的確十分吸引,而在一所滿是名店的大廈內,亦同樣有著相同的感覺。走過一條以紅黑作主調的長廊,遠處的門自動打開,像要把來人引入另一國度。迎面是中央酒吧檯,四周同樣是掩映著熾熱的紅色,很有型格的佈局。靠玻璃窗的一邊,是私人廂房,關起門是一個寧靜世界,跟朋友喝一杯,聊聊天,是一個挺好的選擇,只可惜身邊少了一位火辣的邦女郎。今次品嚐以嶄新方式演繹古老食材----鹽;在古代中國,販賣私鹽更是抄家的死罪,可想而知鹽的珍貴。意大利籍大廚Andrea Magnano花了多年時間在鹽的學問上,自有一套獨特的見解及運用。 在檯上擺放了六款不同的岩鹽,配對不同的食物,務求令食物更添風味。第一道菜是Three Prawns,賣相已經令人心醉,原塊喜馬拉亞山玫瑰鹽板作器皿,旁邊塗上了帶番紅花的鹽,用來配對的是三尾牡丹蝦伴阿瑪菲檸檬蛋黃醬及柑橘刨冰,並灑上甘草黃色Cypriot salt,把蝦肉沾上少許鹽花,吊出了海鮮的甜味,實在出色。 再來是Duck Two Ways,選用了帶濃縮香草味的鹽粒,適合配油份重的鴨肝,中間夾有一片火腿與及泡浸過蜜糖的青蘋果,

第三道是Risotto Rosso,一道以西西里紅蝦作主打來泡製的Risotto,大廚每道菜都是即叫即煮,擺碟一絲不苟,以龍蝦刺身及魚子醬攏放上面,吃的時候加以混和,令飯粒多添了香氣。
