To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 自從兩年前扚起心肝提筆寫第一篇食評開始,人就像著了魔般,現在寫評幾乎已成了生活的一部份。由當初以玩票性質參與,到今天已發展成為一種愛好,當中的心路歷程,著實叫人難忘。記得往年第一次接獲 OpenRice 邀請出席開年飯聚,心中確實是既驚且喜,為人向來不善交際,亦拙於辭令,對著一衆殿堂及資深食家,深怕大出洋相,幸而最後得以蒙混過關,謝天謝地。今年承蒙貴網不棄,續被選為開飯達人,實在深感榮幸,當然最高興的就是能與一衆殿堂、資深及 2012 開飯達人同檯吃飯,並且於上週二齊齊於「東來順」出席由 OpenRice 宴請的 「龍騰東來開年飯聚」。 其實帝苑酒店的幾間食肆當中,筆者只曾光顧過「雅苑座」、「帝苑軒」及「帝苑餅店」,至於「東來順」這趟還是首次到訪。據知這間裝修得極之雅緻的「東來順」,是以供應北京涮羊肉、淮揚菜及京城小吃為主,不過這晚的賣點,當然是以品嚐「大廚出馬」冠軍總廚陳國強師傅的手藝為目標。好了,說回正題,珍席先以六福臨門敲響鑼鼓,順序分別為:花彫醉雞、麻香鮑片、茶葉燻蛋、陳醋蜇頭、金陵鹽水鴨和四喜烤麩。花彫醉雞,入口鲜嫩多汁,口感清爽怡人,只可惜酒味唔濃,稍嫌欠了點醇

好了,說回正題,珍席先以六福臨門敲響鑼鼓,順序分別為:花彫醉雞、麻香鮑片、茶葉燻蛋、陳醋蜇頭、金陵鹽水鴨和四喜烤麩。花彫醉雞,入口鲜嫩多汁,口感清爽怡人,只可惜酒味唔濃,稍嫌欠了點醇香。以粉皮墊底的麻香鮑片,入口既麻且辣,加上粉皮又薄又滑,與鮑片十分之匹配。至於看起來蛋黃成稠凍狀的茶葉燻蛋,以長柄銀匙盛載,單説賣相已叫人驚喜,而且加入了普洱茶葉來燻的蛋,入口外層彈牙,內裡香軟,配上淡淡的茶燻香氣,著實叫人回味。

陳醋蜇頭入口偏酸,幸而咬落爽得來又帶點嚼頭,配上老陳醋,味道香鮮,是一道開胃頭盤。金陵鹽水鴨,皮滑肉嫩,鹹味適中,入口鮮香而不油膩,簡直是一試鍾情。四喜烤麩,赤色麵筋做得像海綿般有吸力,入口醬汁慢慢流出,配上毛豆,食味也不賴。

接著就是由陳師傅親自教授烹調得獎菜式菌皇龍蝦球,有份落場的食友表現極其出色,成品賣相與陳師傅出品實在是不遑多讓。菜式以意大利牛肝菌和羊肚菌加少許黑松露醬炒龍蝦肉,龍蝦肉入口超爽彈,生熟度剛好,火候計算精準度極高,確實令人回味不已。

跟著出場的是陳師傅拿手傑作,醉人蟹后,即以蟹為骨幹,做成一蟹三吃,分別是牛油果蟹肉沙律、酒釀蛋白蟹鉗及蟹粉銀絲卷。先説牛油果蟹肉沙律,入口有蟹肉的鮮甜、牛油果的軟滑、青蘋果的爽口,加上酸酸甜甜的沙律醬,味道清新怡人。至於酒釀蛋白蟹鉗,蟹鉗用上湯蒸好後配上玫瑰露,以酒香帶出鮮味,食味豐畗,難怪在比賽時獲得評判一致讚好。蟹粉銀絲卷,單聽菜式名字已夠新穎,炸過的銀絲卷,入口脆身得來又夠鬆化,跟頂頭的蟹粉一併送進嘴裡,味道真棒!

龍井煙熏鴨,肉質細嫩,入口帶點煙熏的鹹香,加上以龍井茶葉作主要熏料,令菜式增添了一份清新的芬香。花膠鮑魚鹿筋湯,單聽名字已經夠曬滋補養顏,而且湯料除花膠、鮑魚和鹿筋外,還加入了老雞及螺片。據説鹿筋含有非常豐富的蛋白質及骨膠原,其膠質甚至比花膠還要高,加上質感腍滑有咬口,配合其它材料,令湯味鮮香濃郁。

由於先前吃過了數道美味的菜式,所以筆者對這個複賽作品砂窩瑤柱菜飯配龍井茶亦十分之期待。相信有看過之前食友簡介,已知「東來順」廚房是不會處理及烹調豬肉的,但為了忠於原著,決定另覓廚房煮製此道砂窩內的鹹肉。可惜這道特意放進了鹹豬肉的瑤柱菜飯,入口欠了份應有的鹹香,還是隨飯附上的龍井茶,味道更為清香,喝得人更愜意。

東來順甜點,先來花朵外形的玫瑰茘枝糕,分上下兩層,入口沒玫瑰花的馥郁香氣,更沒茘枝的清甜,不過若當作味道酸甜的果凍來吃,口感還算不俗。至於流沙金球,入口香脆軟糯,不甜不膩,而且熱辣辣的奶黃餡,嬌艷欲滴,實屬驚喜之作。餘下的驢打滾,以煙韌的糯米粉皮裹著紅豆沙餡,入口綿密細緻,吃進嘴裡,味道香甜軟糯,難怪能輕易地成為這裡的招牌甜點。

吃過甜美的水果後,又是時候要踏上歸途了,在此再一次多謝貴網的邀請。
