秋意漸濃,又係開始吃秋冬菜的日子,朋友告知衞理徑的南華軒,剛推出了一些幾近失傳的手工粵菜、蛇羮 及 羊腩煲,大家一聽當然躍躍欲試!當日約了一些很少見的友人,大家暢談甚歡,天南地北無所不談!首先上場的幾款前菜,分別係炸得金黃酥脆的「椒鹽魷魚」,真係下酒能手;之後係爽彈煙韌的「舟山海蜇頭」;最後是外脆內嫩滑的「竹炭豆腐」,三款也非常美味,千萬不要錯過。「花膠五蛇羮」隨後上場,蛇肉結實不鬆散,味道香濃又滋潤,配上富香氣的芫荽、檸檬葉及薄脆一起吃,滋味更高!香噴噴的「鳳城焗魚腸」之後上場,即刻引起一陣騷動,原來大家也很久沒有吃過這味菜了;揭開金黃色的表皮,混雜魚油和蛋香味立時瀰漫四周,引得大家食指大動;因怕變凍會帶出腥味,大家也用最快的速度享用;不知是否魚腸清理得很乾淨,還是辟腥功夫做得好,變涼後竟然沒有出現怪味,抵讚。👍🏻菠菜因為所含的草酸較多,入口會有少許澀感,但今次的「蟹粉扒菠菜」則沒有;表面淋上鮮甜惹味的蟹粉,也是很不錯的。幾近失傳的手工粵菜「八珍扒大鴨」,烹調工序繁複,食材豐盛,重現當年古早風味;大廚會先將大鴨上色,再釀入叉燒、香菇、魚肚、帶子及魷魚等食材後炆煮,最後加上芡汁,鴨肉香

菠菜因為所含的草酸較多,入口會有少許澀感,但今次的「蟹粉扒菠菜」則沒有;表面淋上鮮甜惹味的蟹粉,也是很不錯的。

幾近失傳的手工粵菜「八珍扒大鴨」,烹調工序繁複,食材豐盛,重現當年古早風味;大廚會先將大鴨上色,再釀入叉燒、香菇、魚肚、帶子及魷魚等食材後炆煮,最後加上芡汁,鴨肉香濃又入味,大伙輕輕鬆鬆便把它K.O.了。

「古法扣羊腩煲」應該係秋冬菜的常客吧,很多人也喜歡這味菜,肉質軟腍,有羊味而又不會過羶;自己最喜歡肉帶皮的部位,不但有肉香,也有皮的爽彈口感;最後加上翠綠的生菜,在吸收了煲內的精華後,更覺惹味。

最後的「薑葱蠔皇花膠撈生麵」,口感爽滑加上惹味的薑葱花膠,那會不好吃;但因之前食得太多,就只輕輕試了一口。😅

單尾來杯「熱咖啡」,估唔到又幾好喎,味道不會過苦還有陣陣咖啡香,值得一試。
