今個星期六也要全日開工,直踩了六天,當然要鬆一鬆,友人突然提議圍埋火鍋,反正今年都未打過邊爐.....無錯!今年真的未開爐,我也心癢癢,一於忙碌過後盡興一下。在好友介紹下,來到一間裝潢如宮廷般那麼華麗的火鍋店,有高貴精緻的吊燈、餐具、傢俱等等,在此貴麗堂皇、氣派十足的環境下吃火鍋,給我另一體會。餐店設有三排座位,每排以優雅的中式通花木架相隔,設有多張四人枱或六人枱,另外還設有數張十多人枱,還有兩三間貴賓房,地方寬敞闊落,坐得舒適自在。點菜紙有兩版,一版有小菜和飲品,而另一版主要是火鍋食材。不少小菜都挺吸引,不過一早已決定打邊爐,就馬上揀個火鍋湯底先!鍋底足足有十四款選擇,而所取的名字也很特別, 大部份都加上歷史的宮中人物名字, 當中順治特色卜卜蜆鍋、鰲拜火焰六味海鮮鍋和康熙花膠雞湯鍋都很吸引, 但也敵不過同治天麻川芎藥膳魚頭鍋, 幸兒友人也愛吃魚頭, 岩晒我, 哈!******************************打邊爐當然要準備醬料, 一盒四格宮廷醬芥($20/位), 有芫茜、指天椒、蒜茸 和蔥花, 還配有一人一小碟豉油, 樣樣加齊, 款式不多, 但其實食材鮮味都用不著它們

先來定一瓶凍竹蔗茅根 ($28)用來清熱降溫, 所配竟是一隻中式的茶杯, 很特別, 不知飲汽水又會不會同樣配茶杯, 哈! 自家製果然不同, 睇到落足料, 內有不少紅蘿蔔、馬蹄、竹蔗 茅根, 差點連渣也想吃掉。呷一口, 稍稍微涼, 充滿竹蔗甜美, 甜度剛好, 清甜順喉, 用來配火鍋最適合不過。

待一會, 店員便端來一個高貴華麗的鍋具, 刻上中式的花紋和多條栩栩如生的飛龍, 好有霸氣。一把鍋蓋打開, 同治天麻川芎藥膳魚頭鍋 ($138) 散發着陣陣藥材香, 湯底清澈見底, 面頭泛些魚油, 內有不少紅棗、杞子、天麻、川芎、北茋、黨參 等, 當然不少得兩件開半的大魚頭, 用料十足。趁未加入任何火鍋料先嚐原有的味道, 啖啖藥材香, 味道平均, 不會過濃或太淡, 很合我們口味, 連湯渣也同吃, 更滋補養生。

接着要品嚐那個如我手掌般大的魚頭, 經過稍稍香煎, 既迫出魚香, 亦帶有焦香, 更加美味。魚唇、魚皮 臉部魚肉都相當滑溜, 特別是大大隻的魚眼, 連着魚油脂, 很油潤! 還有, 吃大魚頭當然不可錯過魚雲, 是精髓所在, 又滑溜又鮮味, 連隱藏在內裏軟骨也通通給我吃光, 吃得很滋味!

別看只吃了半個魚頭, 其實它也挺飽滯, 所以揀了一些清淡的配料。各配料陸續出場, 先有雜菜拼盤 ($68), 色彩豐富的配搭, 好有田園色彩, 未吃已胃口大開。內有爽嫩的菜心 唐生菜、爽甜的娃娃菜、鮮甜多汁的鮮蕃茄、爽身的木耳 和清甜的粟米, 款款都很新鮮, 而我最喜歡就是粒粒飽滿圓潤的粟米, 很美味!

另一款是雜菇拼盤 ($68), 數數看, 菇類款式也不少, 共有五種, 分別有雞脾菇、秀真菇、金菇、海鮮菇 鮮冬菇, 款款色澤亮麗, 好新鮮。當中最討我喜歡是大大隻的鮮冬菇, 滿有菇香, 又柔軟爽口, 咬一口便爆出菇汁, 正!

再來兩款清淡的配料, 同是豆品類, 有蜂巢豆腐 ($48), 一客六件, 底部舖了椰菜絲。大家知為何它叫蜂巢豆腐呢? 據網上資料所得, 將豆腐放入冰格雪一天, 第二日解凍後用重物壓着豆腐出水而做成, 豆腐的外貎便會呈蜂巢樣子, 所以叫蜂巢豆腐。可能滾得耐了一點, 雖沒有散爛, 但也吃不到豆香, 口感不滑溜, 偏腍身, 個人還是喜歡一般的軟或硬豆腐。

女士們最喜歡吃花膠仔 ($108)補一補, 一碟足足有六大件, 件件都好有份量。顏色偏潔白, 滾了一會, 腍滑中帶微爽, 亦富膠質, 淡淡鮮香味, 話晒是女人的恩物, 當然一件接一件, 毫不留手。

最後也點了一客四粒的帶子韮菜餃 ($48), 隻隻都脹卜卜, 很飽滿! 外皮 又薄又滑, 包滿豐富的饀料, 帶子、韮菜、豬肉 都切得幼細, 集合帶子的鮮味、肉鮮和韮菜香, 三者配搭不錯, 啖啖饀料, 真的皮薄饀靚, 很滋味!

諗諗下....冬天已過,炎炎夏日已到,竟然現在才開爐?吓!?今晚竟是第一擊,究竟冬天吃過什麼?有燒烤、魚鍋、蒸海鮮、串燒、韓燒,全部火辣也吃齊,偏偏遺漏了火鍋。雖今時三十多度,但其實只要好吃,時間、天氣、地點....通通也不成問題,夏天也是火鍋天,還可繼續打, 可見我多愛吃,哈!
