好耐無探過邵師傅,上次去紅棉已經係成年前,難得有朋友搞唔駛安排寫菜咁好嘅局,當然幫下手安排約人食飯。邵師傅真心有難得嘅魄力,我唔夠膽講食個紅棉好多次,但食過四五次後,基本上今次全個menu不單係新,仲要好出色,呢個冬季menu,絕對係近來我好喜歡邵師傅嘅一個Menu之一。最好嘅係,之前食咁多次好似都冇寫過,今次寫下啦。前菜以前我好喜歡佢整嘅瀨尿蝦,今次係椒香蔥油酸薑阿拉斯加蟹配芥末兒菜,淨係個主角阿拉斯加蟹已經夠勁,佢今次嘅味覺強勁好多,當然有佢嘅拿手椒香好戲,加上蔥油更加香,再加上酸薑嘅衝擊,同淡淡微涼的芥末兒菜,完全係精彩示範。鮮螺頭甲魚清湯又係非常好,首先甲魚係非常補嘅,個湯加上螺頭之後更加之細緻,但最緊要係好清好甜。主菜黃燜一品燴係一個豐富到不得了嘅菜式,大條嘅海參,雞湯,加上旁邊輕輕炸過嘅燕窩,你食得出大師嘅細膩同佢嘅手工工價,記得上次朋友攪局都有食過一個差唔多嘅菜式,但係今次upgrade同進步咗。相對簡單嘅魚香蝦球帶子,但味道其實幾好,而且好靚,隻帶子應該係刺身級。檸檬葉燴珊瑚黃花魚柳件魚真係好大舊,佢件魚加上左蝦膠同蟹黃,清新嘅檸檬葉加上點點嘅汁,呢件真係好好食,味道好

鮮螺頭甲魚清湯又係非常好,首先甲魚係非常補嘅,個湯加上螺頭之後更加之細緻,但最緊要係好清好甜。

檸檬葉燴珊瑚黃花魚柳件魚真係好大舊,佢件魚加上左蝦膠同蟹黃,清新嘅檸檬葉加上點點嘅汁,呢件真係好好食,味道好多層次,好有特色,絕對食到師傅嘅心機。

全晚最得我心嘅一定係咖喱香酥美國牛小排,首先個美國牛小排係炸得非常完美,長方形嘅牛小排肉質同密度都堪稱完美,最重要係個咖喱汁,大家都知道小師傅曾經喺印度做過一段時間,所以佢係對咖喱好有研究,而呢個咖喱味道適中,唔係好辣,而且帶甜係近北方咖喱嘅色彩,好味道我哋要再加飯送個咖喱汁。

香煎臘味糯米飯拌蔬菜絕對係精彩,長方形嘅香煎臘味糯米飯,外層煎得脆香,雖然食到呢度已經好飽,但係都冇剩,炒糯米飯見得多,要做得好食唔容易,呢個做得好食仲要咁有特別,係好值得欣賞嘅。

甜品係未見過嘅狀元茶湯丸、雲腿酥,個人覺得雲腿酥好特別,當然仲要加上佢嘅芝麻卷同山楂卷,呢個係每次都要食嘅邵師傅signature 。
