夜上海是車軚人一星餐廳,亦是筆者喜愛的滬菜食肆。高雅舒適的環境,精緻質優的美食是夜上海的亮點。 三道體驗完全不同的頭盤,軟腍的陳皮糖醋排骨屬醒胃之選,以酸香的味道喚醒味蕾,陳皮的投入亦令菜式餘韻更為紮實持久。再吃兩片爽彈的香辣海蜇,強烈的辛辣感進一步提振精神。高潮過後,以脆皮素燒鵝來個酥脆可口的小結,為緊接而來的佳餚建立一個好開始。 滬菜的包點一向惹人討好,當中的鮮肉小籠包更是筆者至愛。薄透完整的外皮,內裡注滿溫熱的湯汁及滑溜的肉餡,出品質優。 外表平平無奇的素菜包本來用於快速滿足兩隻小鬼的胃納,未有寄予厚望,出來甚佳的味道反而更加驚喜。最後素菜包這款點心成為全晚唯一再「encore」的美食! 乾燒明蝦球可算全晚唯一的海鮮菜式,賣點除了爽實的鮮蝦外,乾燒酸辣醬汁更應是重點。可惜醬汁味道未如預期般惹味搶口,顯露不了應有的峰芒。 片皮烤鴨是另一京滬名菜,一鴨兩食更是經典做法。要數一隻烤鴨最香口的部份,無可否認一定是鴨皮。這份香脆鴨皮連薄餅,鴨皮烤得色澤棗紅,切片非常薄,既可彰顯廚師們的刀功,亦可加強鴨皮的香脆口感。至於剩餘的鴨肉,則用以製作銀芽炒鴨絲,鴨絲濃味軟嫩,確實
