To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 五月第三個星期四晚上,天氣炎熱。一個月總有幾次跟這幾位朋友吃飯,每一次他們都早就訂好位子,今天晚上選在這家飯店晚餐。飯店裝潢古色古香,光線明亮,菜單以中英日語表示,看來光顧的日本客人應該是蠻多的。夫妻肺片為一道川菜,以牛肉為主,混入牛隻其他部位,佐以紅油,花椒辣椒而成,冷卻切片上桌,惹味醒胃。醉乳鴿是一道傳統美食,在外面不常見,這裡的乳鴿用了很多花雕酒,酒味非常濃郁,為一道冷吃菜品,經過繁複的烹煮過程後,乳鴿肉質爽口嫩滑,吃一口乳鴿喝一口花雕酒味道更佳。合桃燻蛋最重要的是蛋黃的狀態及煙燻味道,蛋黃呈流心狀態,燻得也蠻香的,口感很好。無錫脆鱔是江蘇無錫的傳統地方名菜,在中國眾多鱔魚佳餚中獨樹一幟,又名梁溪脆鱔,由於火喉的控制要非常謹慎,故此無錫脆鱔也是功夫菜。包裹了酸甜醬汁的脆鱔,酥脆不油膩,像炸鱔皮一樣,很像在瑞士中餐館常見的香酥牛肉條的口感,越嚼越香停不下口。樟茶鴨是四川傳統經典名菜,屬燻鴨的一種,帶有樟木和茶葉的獨特香味。鴨肉外酥內嫩,沒有帶半點腥味,夾著吃的包子微暖,如果熱一點就好了。美酒加上如斯優雅的環境,又渡過了一個美好的晚上。
