對上一次入「東涌世茂喜來登酒店」用餐都已是兩年前的事,當時造訪了 Sunset Grill 的 Sunday Brunch,發覺相當抵食,無論食物、環境以至服務,都令人滿意。而今次跟囝囝的契爺契媽以及一段日子沒見的朋友飯聚。「采悅軒」位於酒店二樓,除了廂房的景觀特佳之外,其實餐廳盡頭的玻璃窗位,同樣可享優美的海景。雖然是平日的午間,但餐廳都差不多全滿,客人除了酒店住客外,亦有不少是東涌居民,看來餐廳已建立了不少口碑。采悅小碟翡翠如意餃、柚子蝦餃、天鵝酥YUE AppetizersSteamed Shrimp Dumpling with Chinese CabbageSteamed Shrimp Dumpling with CitrusDeep-fried Taro Puff filled with Roasted Duck and Mushrooms三款亮麗點心盡顯師傅功力,先試試象真度極高的柑橘蝦餃,加入了柚子肉,果香令蝦餃多了一份清香感,很妙想天開的手法。中間的天鵝酥尤其趣緻,造型唯肖唯妙,餡料是惹味的燒鴨粒與及滑溜的芋茸,味道的大滿足。個人最愛的,就一定係似足故宮珍品小白菜的翡翠

杏汁花膠燉菜膽

但凡煲過都知洗豬肺係幾花時間及心機,所以如無必要,寧願係街外享用。

一揭開盅蓋,即時瀰漫杏仁的香氣,奶白的湯頭,已知道是用時間熬出來的成果,呷一口湯,濃稠的質感,令咀唇感到黏性,花膠的骨膠原都跑到湯裡了,就連菜膽達到入口即化的地步,醇厚芳香,超正。

百花釀蟹鉗

Deep-fried Crab Claw coated with Shrimp Paste

絕對是真材實料,選用了菲律賓的大肉蟹鉗,拆殼後包裹了蝦膠再炸,薄薄的一層漿粉,有錦上添花的感覺,用刀割開兩半,已經睇到蟹肉的澎湃,其實建議用手拎起就咬,盡顯豪情。

太子鴨

Roasted Baby Duck

琵琶鴨都食過不少,但以細細隻的米鴨來做琵琶鴨,就的確少見。

但正因為選用幼鴨,肉質會更嫩,鴨皮是吃得出的香脆,而且份量上更加可以遷就到人少的顧客。

手打魚腐魚湯浸娃娃菜

雪白的魚腐,咬落輕盈的程度,令人想起杭州菜中的蒓菜魚丸,而奶白的魚湯絲毫不帶腥味,反而是魚湯的鮮甜,就連娃娃菜沾上了湯汁後,味道都提升了。

講起貴妃,當然想起唐玄宗為討歡心,博妃子一笑,特意從嶺南運來荔枝,望落似粒真正荔枝,咬落更知真偽,原來是有荔枝味的奶黃煎堆,奶黃仲要係流心,也未免太吸引了吧?

燈影煎堆($198)


湊巧是日係囝囝契爺農曆生日,總廚Jacky送上了大如籃球的煎堆來慶生,真是誇張得可以,但煎堆薄薄的一層,連陽光都輕鬆透過,食落香脆,的確好啱一班人分享。
