琴日行街行到肚餓,心思思諗食啲咩填下肚,突然就畀我見到間袁記雲餃店。平時都聽人講呢間鋪頭嘅雲吞同餃子好正,即刻就走咗入去試下。一入門,就見到師傅喺後面包雲吞、餃子,一隻隻、一隻隻,手速快到飛起,而且明顯都係現包嘅,新鮮睇得見,個心即刻就安落嚟。我叫咗兩款招牌雲吞,一款紫菜鮮肉雲吞,一款冬菇馬蹄雲吞,再分別試下混醬乾拌同紅油幹拌兩種口味。先講紫菜鮮肉雲吞,個頭飽滿,皮薄到透光,咬落去 “卜” 一聲,口感爽利。裡面嘅鮮肉餡彈牙多汁,紫菜嘅鮮香滲入肉裡,成個餡嘅味道層次即刻豐富晒。用混醬乾拌嘅時候,花生醬嘅醇厚同雲吞嘅鮮美完美融合,每一口都馥郁濃香,啲花生碎仲增加咗口感嘅豐富度;換成紅油幹拌,嗰陣香辣直衝鼻腔,紅油嘅辣唔會嗆喉,反而勾出雲吞嘅鮮,辣得過癮又停唔到口。再試冬菇馬蹄雲吞,呢個組合就好有創意。冬菇嘅香濃、馬蹄嘅清甜爽脆,搭埋一齊,口感對比強烈又出奇地和諧。混醬一拌,花生醬嘅絲滑裹住雲吞,馬蹄嘅清甜透出嚟,平衡晒花生醬嘅濃郁;紅油拌嘅話,辣意刺激之下,冬菇嘅香、馬蹄嘅甜更加突出,一啖接一啖,根本停唔下。袁記嘅雲吞同餃子,真係平、靓、正嘅代表。食材新鮮,每日現包,唔怪得咁多食客幫襯。無
