喜之次這種魚比起金目鯛更為矜貴, 因為它的魚脂特別肥厚, 使其肉質更加美味, 不單只難以捕捉, 而且一出海水會即刻死亡, 所以全世界吃到的喜之次魚, 都經過冰鮮或者急凍處理, 但卻無損其肉質細嫩且膠質豐富的特性。用少量海鹽來燒最能夠品嚐到它的原汁原味, 而且魚皮又燒得香脆, 的確吸引。
