To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 上星期朋友生日,訂了枱在鮨文品嘗師傅發辦,這位朋友出名咀刁,所以揀了這間評論不錯的餐廳與他慶祝。店內裝橫簡㓗,地方細少,約可坐八人左右,食客的座位圍着師傅的工作枱,我們可以看到師傅製作食物同時亦可聽他講解食物的產地和味道。這𥚃的茶碗蒸面頭舖上大粒三文魚子、中間滑滑的水蛋、底層是一粒粒的乾瑤柱,料足而有層次,瑤柱同水蛋的味道很配合,有點像媽媽蒸的水蛋。生蠔我喜歡不落任何調味料,因為可以食到蠔本身的鮮味,師傅話蠔的體型要開了才知道的,好壞與否一食便知,幸好這隻蠔沒令人失望,食完仲有些餘韻在口中回盪。這裡用了分別是後生、成年的吞拿魚做了兩種食法,由淡至濃味開始食,後生用來刺身,鮮嫩而魚油肥美,成年用火炙,甘香味美,加點特製的芥辣醬,即時可清除多餘的油膩感。他們把海膽杯取了個很好聽嘅名,叫雲丹盛滿,名附其實,真係滿到瀉,一啖海膽一啖飯,美味而滿足。食完飯再來飲碗魚湯,奶白的魚湯非常鮮甜,真材實料。現在有些地方的師博發辦都喜歡食蜜瓜時噴一些威士忌來增加香甜味,這𥚃也唔例外,但我覺得本身已很甜的蜜瓜就不用加威士忌了,而不太甜的加了確實能增加一點香甜味的。之前光顧過的師傅發辦,通常食完餐飯也不過七成

之前光顧過的師傅發辦,通常食完餐飯也不過七成飽,埋單時感覺又貴又唔飽,但這裏就能吃到十足飽,確實又貴又飽肚,十分滿足,嘴刁的朋友大呼抵吃抵吃!
