Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

工作關係,有緣到由新西蘭貿易發展局舉辦的新西蘭海鮮節博客宴。整晚的感覺是非常滿足,也十分之喜出望外。整晚的菜式除了最後一味外,全以海鮮為主,沒有加入其它肉類,但一點都不會覺得單調。味道之精彩表現了師傅的技巧,精妙地運用了新鮮食材(很多都是當天早上才空運到港的),炮製出美味的佳餚。第一味菜式是油鹽水浸鑽石殼蜆。第一眼看到的感覺是蜆肉很飽滿,很難得有蜆肉可以滿了蜆殼的情況的。而味道當然是好啦,很鮮甜,弄得粉絲及鹽水湯都很清甜。正。之後兩味是綠唇青口,一款是以較清的艇皇海鮮大會,除了青口還用了三文魚及其它海鮮炮製;而第二款則是較為濃味的味醬炒鮮青口。兩者各有特色,而最重要的是這款由新西蘭來的綠唇青口同樣是十分有份量,很厚身,味道更是甜美。雖然第二款的味醬較濃美,但仍能吃到那份從海水而來的清甜,很難得。而這款新西蘭獨有的帝王三文魚除了用在艇皇海鮮大會之外,更化身成兩款不同的菜式。分別是梅菜皇蒸三文魚及松露三文魚卷,也是一清一淡的配合。用梅菜來蒸三文魚再加茄子真是第一次吃,三種食材的味道各有不同,展是了三種層次。而松露加上三文魚來煎,真的很香口,不過就略為油了少許。如要選擇,自己會較喜歡艇皇中的

另一款也是新西蘭獨有的海產:藍鱈魚。師傅用煎封的方法處理,先把主骨去掉,然後用大火將魚用短時間內煎熟,這樣便能做到外脆內軟,能吃出淡淡的魚味,但絶不會腥。

全晚的高潮就在兩款用黑腳鮑魚煮成的蠔皇新西蘭鮑魚乾蔥生爆鮑魚雞煲。鮑魚名為黑腳是因為本身呈黑色,而在師傅的巧妙安排下,用了蠔皇及雞煲來處理,不但察覺不到原色的況狀,反而加深了色澤的變化,更表現了與一般鮮鮑魚的不同。其實兩款菜式都是較濃味的,但因為是鮮感,吃得到的就是一份鮮甜味。特別驚喜的是那個鮑魚雞煲,因為原本怕鮑魚這樣處理會較硬,但這完全不用擔心,只是較有嚼勁,完全是好吃可口的。

高潮過後就來到全晚的一個總結,最好的當然就是甜品了。今晚特別炮製了豆腐花,是每一碗個別燉製的,很有心思。而當中除了白滑外,更有香香的豆味,真是全晚最好的一個總結。
