To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 上環因為多寫字樓,近年都多了很多高質食店,但要數高級鮨店,可能暫時只有新開不久的鮨燐。鮨燐晚市就如其他同級鮨店般,人均消費都以一千元起跳,但午市定價相對就親民得多,大部份都是二百多至三百多元,如果不特別追求即日飛機貨,午餐都縛抵食.**************鮨燐店面不大,壽司吧枱只可客納九位食客,另有一個小包廂。午餐有定食、壽司和刺身選擇,價位由$258至$398,另有$800的廚師發辦套餐。我點了14貫壽司定食($398),壽司款式是師傅安排,個人覺得這個定食海膽拖羅都有,跟廚師發辦套餐相差不遠,但索價平一半,性價比較高。沙律新鮮爽脆,酸香十足很開胃。蒸蛋熱辣辣,非常滑溜,內有木耳、蝦、冬菇和蟹柳。上壽司前,師傅先奉上漬物,有酸薑和蘿蔔漬。鮪口魚魚味較淡,上面是味噌醬,令食味大增。帆立貝鮮味夠,但略嫌較為薄身,影響口感。金線鯛本身魚香較淡,但師傅火灸後再加了一點醬油,味道不錯。牡丹蝦夠大隻,蝦肉結實爽甜,超好吃。深海池魚夠厚身,魚味亦濃。赤貝非常爽口。池魚本身魚油不久深海池魚豐富,但師傳加了薑蔥在上面,令味道較為豐富。松葉蟹肉份量非常多,味道鮮甜。海膽入口冰涼,味道超鮮甜,超正!三

總結,質素拍得住尖沙咀銅鑼灣等高級鮨店,午市雖然魚生都隔了一晚,但仍然非常有看頭,以比晚市便宜一半的價錢能吃壽司吃到飽,性價比非常高。
