上回到訪月·善得到不俗的回響,適逢最近要選址為家人慶生,決定再次到訪享用一頓特色私房菜。 和上次一樣,餐單早已訂定,人齊便可開飯喇!今回的頭盤是富滬菜特色的四小碟,分別是陳醋雲耳、無錫素鱔、鎮江肴肉及糖醋小排骨。陳醋雲耳食味酸爽醒胃,是合適的開胃前菜。無錫素鱔以冬菇絲作主要食材炸香上碟,雖賣相有點似鱔條,但食味則不相像。其實這也不要緊,最緊要美味可口,素鱔的甜脆食味筆者挺滿意。鎮江肴肉製作密度高,味道合預期。糖醋小排骨調味 OK ,但肉質稍稍實了一點。湯品無花果蘋果南北杏燉展肉,選材十分滋潤,不論無花果或蘋果皆很甜美。因湯料足及夠火候,湯汁當然敦厚甜潤,是秋日合意之選。麻香燒汁焗大蝦選材足有八至九寸,味甜肉實,蝦頭蝦羔豐碩。菜色用上的醬汁富和式風味,口味帶甜。相比上回吃的鮮胡椒蒜片大蝦,筆者還是喜愛胡椒蒜片汁多一點。椰青蛋白魚卷是甚富水準的作品,魚卷雖以沙巴躉入饌,口感仍然十分嫩滑,魚香清甜。卷中引入一小段翠綠露筍,亦為白滑魚卷多添一份顏色及口感。魚卷下方的蒸蛋白甚有彈性,滑度亦足,更驚喜的是添上的椰青汁,椰香清幽泛甜,和蒸蛋味道十分匹配,值得推介。冬蔭功煮花甲是富泰菜風味的美食,花甲
