先來一杯Taittinger "Prélude" Grands Crus Champagne此香檳在酒窖中熟化了5年才出產,傾出來帶亮麗淡黃,豐盈的氣泡入口很細膩,喝下初感富點礦物味但很快就被花香取代,依稀喝到些我喜歡的接骨木花味道,這樣當然輕易博取到我的歡心吧!

迎賓小食送來帶幽幽肉桂香的南瓜球,平時對肉桂敬而遠之的我連汁也乾掉,無他的只因師傅將肉桂的用度調得恰到好處,剛剛到我接受的境界再配上香甜的南瓜球,那化學作用令我絕不抗拒!

胃口已被打開延續的是兩款精美又矜貴的點心,包括是萬豪金魚餃及金殿乾鮑魚酥,未品嚐味道前光是欣賞那點心的造型已樂上一陣子吧!
萬豪金魚餃以新鮮黃皮老虎斑肉、生蟹黃及芫茜組合而成,澄皮貫以金漆身軀冠冕堂皇,內餡則甘鮮甜美確是引人入勝的一尾靚魚。
說到矜貴金殿乾鮑魚酥則用上南非原隻50頭乾鮑來製作,越吃越出味的鮑魚味份外濃郁,酥香撻底還盛載著雞髀菇、雞肉、羊肚菌及甘筍粒,吃下味道香而不膩口感非凡必要一嚐。

接下來是萬豪金殿獻萃!三款以Jayson師傅的童年味道變奏出香港情懷的精髓,包括是的式可愛的鹵水釀墨魚、看見已垂涎三尺的萬豪貴妃叉燒、和邪惡的金殿乳豬三文治,三款也超吸引吃那件先好呢?

我們聽從他提議由鹵水釀墨魚吃起,此爽滑墨魚的靈感是來自潮州打冷菜式,師傅精巧的釀入了甜酸菜味道跟口感也便更相得益彰,是三款獻萃中我至喜歡的一員。

萬豪的叉燒早已聞名於食圈!而萬豪貴妃叉燒是即叫即燒的想像到那肉汁必定保存妥當,事實亦如此叉燒吃下口感淋滑中富咬口,微帶焦香加上恰好的蜜味誘人的,所以我兩片不留的吞下肚子去!!

第三款是茶記鮮油多的高貴版乳豬三文治,師傅創作靈感來自茶餐廳美食,只是麵包幻化成脆卜卜的乳豬皮和威化薄片,而主角*鮮油*則以花椒粉及忌廉自製的鵝肝醬來替代,那麼厚的鵝肝醬大家會問膩嗎?不用怕皆因面層灑滿了清新的青檸皮,吃下去除了脆、香、甘外更多了份鮮爽,相信大家只會想Encore多件!

接下來上的是艇皇花膠鮮魚湯,濃稠的奶白湯色很迷人味道鮮甜極緻,內裡蘊藏著原件養顏花膠、手指般長的鹹鮮大虎蝦乾、還有吊出鮮味的花甲外更添加了素千層在內,令我不止喝到鮮甜魚湯還能吃得到箇中的精彩絕倫。

喝過精彩的艇皇花膠鮮魚湯後侍應繼續送上鮮氣滿滿的菜式!來者正是這道身披黃金甲的金影玉玲瓏,因車婆婆喜歡嚐鮮所以我自少便經常吃到琵琶蝦,我覺它的肉質和鮮甜度更勝龍蝦,!但我們這夜嚐的是比琵琶蝦更矜貴豬琶蝦,我又真的沒試過呢!!
師傅將豬琶蝦肉用油燙至7至8成熟,再伴以藏紅花雞湯汁放在蒸蛋上,於客人菜前刨上烏魚子碎徒添香味,成件事令我感受到他那追求一絲不苟的精神!
晶瑩剔透的豬琶蝦多肉而厚身,吃下鮮甜彈牙確教人一試難忘!!
另外那蒸蛋伴以鮮甜幽香的藏紅花雞湯汁,吃下滑溜勝雪之餘配襯下圖那枝白酒更是餘韻悠長,確給了我很深刻的味道!!

選用了以香港天然飼料餵飼的本地走地農圃雞製作,沒下激素催谷養足100至110才出售,本地貨真的要大大力支持啊!
雞件被充滿菌香的汁醬重重包圍吃下濃郁中不乏菌香,雞皮薄而少油肉質滑口鮮嫩味道又濃郁很好吃,而新鮮雞最可愛之處便是連內臟也附上,吃一件雞膶再品一口紅酒已經是人間美食了!
太美味的汁醬那可浪費點來一個白飯大家分享,配上吸盡雞香的野菌佐吃這口飯值得留念!

緊接著這道菜是Jayson師傅充斥愛的獨家之作八珍醬方肉!由女兒薑醋所啟發出來動人的父親菜,面層更配上蕎頭緣和紅桑子乾吃下更添層次滋味,五花腩被薑醋汁完完全全融化掉吃下鬆化至極,獨到之位是那片坊間少有的樹葉脆片,不止賣相中看脆卜卜的口感也奇佳呢!!

靈感來自火鴨絲湯米的酸麻湯鴨絲薯粉,端來時那氣味已令我兩頰一酸,唾液不由自主的湧出來!!
澄黃的濃湯滿載鮮、香、酸、麻味道什雜陳喝一口震撼味蕾,唯獨欠我最喜歡的辣如有的話對於我絕對是完美無缺!!不過有了這杯Riesling又令我跳到另一境界,喝一口令酸麻湯更加醇美,鹹甜交錯的滋味叫人神往不已!

是夜甜品怡香玉露以太極賣相示人!白色部份是糯米漿而黑色的乃竹炭粉,內裡是還加上甜美的芒果肉,於吃前加入附隨的炸脆米令口感更佳,但我實在太滿足了只嚐了一口便麻煩美女出口相助!味道超清香最重要一點也不甜膩呢。
