今晚同朋友去咗銅鑼灣食Omakase慶祝佢搵到新工,好耐之前食過今日再encore。環境高檔次,簡潔得來蘊藏着淡淡優雅韻味,有大大張吧枱,可以看著廚師細心炮製美食。揀咗個Dinner D set 多左牛和龍蝦。鮑魚取代了缺貨的象拔蚌。餐前先揀日本酒,我揀咗比較果味重的桃酒,甜甜的易入口。季節沙律蔬菜好新鮮,有羽衣甘藍、日本蘿蔔等,加上兩隻大蝦好爽脆,配上日本醋好開胃。南非孔雀鮑魚見住鮑魚新鮮由水族箱拎出嚟,非常新鮮,食落彈牙又有質感,有魚子和菊花做點綴。配上海葵醬,旁邊的肝臟也可食用,味道比較濃,後食。西澳龍蝦同樣新鮮,蝦膏做返醬汁好鮮味,龍蝦肉質彈牙而爽脆,配上食用花,增添美感。熊本牛厚切燒/澳洲牛柳配煎野菜選用了優質牛食材,油脂分布平均,入口即溶,牛味香軟幼滑。跟日本大啡菇,南瓜和翠玉瓜一起燒,吸收了牛燒過的精華。超好味。唔夠鹹可以點旁邊的竹炭鹽。清酒煮蜆日本蜆好大隻,鰹魚湯底和本菇和海苔一起煮,增添鮮味。海膽炒飯材料有蛋、瓜、海鮮類還加咗好多海膽去炒,飯炒得粒粒分明。甜品揀咗薑味雪糕,薑味好濃,超讚。
