To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

如今在長沙灣,也可吃會大碌竹壓麵之古早味,他的名字是"坤記",在長沙灣永隆街近元洲街一段.此手藝可說是其中一樣飲食文化遺產,在急功近利,勢利市劊的香港社會,肯花時間心機,去做好一樣回報不大的事物,已買少見少,既然有人還肯去做,當然要支持一下.在門外的櫥窗,更可一灠整個麵條製作過程,絕非閉門做車之流.礙於地區性,價格不能標得太高,兼且大件夾抵食,如果想學麥奀賣細蓉,會被人大罵呃錢的,我在長沙灣長大,區內的生活如何我心中有數,那有不明白之道理?現代人越著重健康,越重口味的東西,越被視為洪水猛獸,如豬油撈麵是其中一例,很多地方也有得吃,但大多不會在餐牌上列明.與賣三六一樣"施施縮縮".坤記夠膽將豬油撈麵放在餐牌上,信心果然十足,我一向是重口味之仕,最愛吃加上豬油的撈麵,見此一味豈能不心動?麵條事先剪過,夾上來不是一條過,對進食或會覺得方便一點,但硬是有點多餘,麵條不是銀絲細麵般幼,質感彈牙柔韌,沒有鹼水味.不過豬油味道則不夠香.反而豬油渣粒下得非常重手,粒粒豬油渣卜卜脆,在新加坡吃到的炒蜾條,豬油渣是必備之物,不加就不是一回事了.另上的湯底,加了些蝦子在內的上湯,味道不算很鮮,略嫌淡了一點點

再來一碗淨雲吞,講明雲吞不是細蓉份量,也不是沾仔的拳頭般大,外表帶點散尾,碗內其中一粒雲吞(圖中左下角),上檯時已經裂開,餡料外露,事後詢問店主,他說雲吞皮是外來貨,不是自家製.質素自然難以保証.說回餡料,蝦肉與豬肉份量相當,亦即是傳統之口味.蝦肉爽口,豬肉味道豐富,假若雲吞皮質素好一點,那就會有更高分數.

離開之前向店主反映,真佩服你們開宗明義賣豬油撈麵,但豬油不夠香.店主說下次來的話,事先要求"落重油",我們會照做.

聽罷,口水又再流下來了.
