疫情過後,香港市道還未復甦,有一些熟悉的店舖都捱不住,突然間有點感觸,亦希望寫下自己熟悉多年的餐廳,希望吸引更多人去消費,盡力保存小店。灣仔嘅一虎拉麵,我已經不知不覺光顧了好幾年。佢嘅拉麵同餃子都好出色,亦都吸引了不少外國遊客。一虎拉麵以自家湯底為主,豬骨湯底濃郁鮮味,每一口都能夠感受到豐富嘅味道,雖然味道香濃,但是一點也不油膩。而另一款赤虎拉麵是大阪人氣嘅選擇,味道是激辛味噌,好適合愛食辣嘅人。一虎可以讓客人自行選擇麵的種類和硬度,分別有幼麵和粗麵,如果你唔知揀咩,可以選擇廚師推介,由廚師決定,一定唔會讓你失望。麵質方面,咬落去有嚼勁,還做到湯汁掛麵的效果。配上香蔥和爽口木耳,口感層次更豐富。兩碗的叉燒是一模一樣,肥瘦適中, 十分大片,豬肉慢煮煮得夠嫩滑!而糖心蛋入面十分流心,人都醃得夠入味。除咗拉麵,亦叫了煎餃子,外皮煎至金黃酥脆,內裡嘅餡料夠juicy ,即叫即煎十分熱辣辣。如果坐吧枱,可以欣賞廚師製作拉麵的過程,望落亦很治癒。
