先來一道又睇得又食得的秘製火焰叉燒 Barbecued Pluma Pot in Flame, Ding’s Style ($328)。店員把其端上枱後即席點火,紅紅烈火不斷燃燒,難怪命名火焰叉燒。邊燒邊散發陣陣香氣,令人垂涎。每件都挺厚身,色澤紅潤,外面帶些焦燶,沾上亮麗的蜜汁,賣相吸引。

入口鬆化,亦存肉汁,肥瘦相間,比例合宜,肉香中帶些焦香,亦甘香油潤,帶有蜜糖的甜美,的確色香味俱全,果然推介。

接着是一道巧手之作,鮑參海鮮酸辣湯 Seafood Hot and Sour Soup, Abalone, Sea Cucumber,  Seafood ($218)以一個印有「鼎」字的湯盅盛載,更有氣派。一打開盅蓋,嘩!豆腐 切成極幼絲,浮在湯羹中,很美!師傅真的刀工了得。

湯身稀稠度適中,很滑身,除有大量滑溜的豆腐絲 外,還有爽口的海參絲、腍嫩的鮑魚絲、爽彈的蝦粒 等炮製而成。味道酸酸辣辣,刺激味蕾兼醒胃,還有些慶烚烚的感覺,滋味過癮!

生炒骨 件件紫紅亮澤,外層緊緊沾滿微微酸甜的醬汁,很入味。每件夾雜些肥膏,甘香油潤,外表稍稍香脆,內肉鬆軟,存有肉汁,的確是一道色香味俱全的菜色。

蔬菜不能少,最後點了一道簡單的家常素菜,就是銀杏鮮腐竹扒翡翠 Braised Bean Curd Stick, Ginkgo Nut, Seasonal Vegetable ($188)白菜半 浸着湯汁,面頭舖滿鮮腐竹,配些銀杏白菜仔 翠綠清爽;鮮腐竹 柔軟腍滑,滿有豆香;原粒的白果 粒粒飽滿,帶點微苦。整體味道清新怡人,很合我口味。

今晚親身品嚐過鼎爺的菜式,果然令人回味,很想馬上回家繼續重溫《阿爺廚房》,相信今星期都會集集追,還可能忍不住約一大班朋友去銅鑼灣分店,又嚐一嚐私房菜的味道。
