上次晌銅鑼灣嘅「鉄人旨花」食過一次「廚師發辧」,確喺一次難忘體驗;最近,嚟到尖沙咀嘅「鮨一」,品嚐當造時令嘅魚生,亦喺一次難忘體驗,皆因睇住師傅切魚生、擺盤,已喺一種視覺享受。位處藍馬商業大廈18樓嘅「鮨一」,地方唔大,裝修主要喺日系淺木色嘅慣常配搭,表現出親民、暖和嘅感覺。記得訂枱就最穩陣,我哋都嚟得早,眼見已經坐滿晒。我哋訂枱時已要求坐晌吧位,既可欣賞師傅做菜,佢哋個嘅位枱面又比較深長。餐廳內嘅花巧嘅裝飾唔太多,較得意就喺吧位一角放置一大籃新鮮日本蕃茄、迷你招財貓、小型日本郵筒及狸貓仔。翻一轉餐牌,選擇多多,由佐酒小食、沙律、刺身、壽司、手卷、卷物、串燒、爐端燒、一品料理、揚物、炒飯、茶漬飯、冷麵、湯品、啤酒、清酒及汽水、梳打……等等,如居酒屋般應有盡有。而亮點嘅千層海膽飯就額外另一張餐牌列印出嚟,當日所見,為打卡又好,呃讚又好,抑或真正享受海膽嘅豐腴又好,確喺有唔少客人落單,我哋坐晌吧位,睇住師傅密密手唔停咁做。鮨一沙律 $128今次我哋主要目標喺刺身,所以,海膽飯就無刻意去試。先上場喺鎮店沙律,其實喺以魚生做底,內有好多魚生角切、八爪魚,再加埋蟹籽、沙律菜、日本蕃茄,所以,入口

今次我哋主要目標喺刺身,所以,海膽飯就無刻意去試。先上場喺鎮店沙律,其實喺以魚生做底,內有好多魚生角切、八爪魚,再加埋蟹籽、沙律菜、日本蕃茄,所以,入口鮮味盡出,蕃茄清甜多汁。

喺八爪魚小丸子嘅燒餅版,燒餅煎好後,灑上大量紫菜及木魚碎,睇見都幾吸引。入口口感其實跟食小丸子嘅分別唔太大,粉粉軟軟,鹹鹹甜甜,不過,八爪魚粒唔多。

曾經晌尖沙咀嘅「浜燒」試過一次,知道都幾正,所以,就專登點嚟俾老友試。燒香咗嘅蟹肉連蟹膏,跟蛋黃溝埋一齊,再用嚟塗多士食,多士香脆,蟹膏甘腴,濃香而滑溜。食完,都仲覺得有一朕餘韻晌口腔盤旋。

是日嘅重點登場,就喺刺身,除揀咗個「特上錦繡刺身」外,仲有兩款師傅話新鮮返貨嘅粒貝及活北寄貝。睇師傅切魚生、擺盤時已見興奮,因為,砌得真喺靚,靚得像藝術品般。

8款刺身,各2切,包括有牡丹蝦、吞拿魚、油甘魚、黑睦、魚、鯛魚、加拿大海膽及日本鮮帶子。小弟就唔逐一評論,因為,食刺身都唔喺我嘅強項,不過,刺身色澤明亮,唔會暗暗啞啞,可以講「新鮮度」睇都睇得到;而整體而言,鮮甜味十足,要爽口有爽口,要油香有油香,要甘腴有甘腴,實在高質
