香味 (3/5) - 鹽本身係聞唔到的,大家都知道。如果食鹽拉麵,香味方面我會重視有冇一種顯著嘅基底同軸心,咁,佢嘅底味係來自鰹魚湯,都算好聞,其次有少少芝麻嘅香味。

講返正題,個湯嘅味道主要係來自鰹魚湯,我食唔出雞骨或豬骨湯本身嘅鮮味,蔬菜味唔明顯,粟國鹽係咪可以單天保至尊我又認為未至於。從湯嘅色澤,味道,䶢度,同芝麻帶出來嘅風味來講,我認為都算係正常水準,唔好唔壞,但一定唔係驚艷級數。

麵條 (4/5) - 麵方面係有驚喜,佢係用中細麵,有加全粒小麥粉,麵味充足,驚艷到我嘅係麵條非常的爽口,我認為非常唔錯。

配料 (2.5/5) - 豬叉燒係用豬五花,腩肉來講佢算瘦。可惜肉質偏硬,冇足夠肉味,麻麻地。

另外一提,除左碗麵本身我認為麻麻地之外,有一樣野我係比較唔滿意,就係個燈光。成間店都偏暗,而所有位都冇刻意加盞燈去照明,令到影相偏暗,光用肉眼睇都覺得睇得唔夠清楚,連d麵有用全粒小麥粉我都係睇相先察覺到。單單係影相唔靚,响而家d名店 setting 來講非常蝕底,成件事變得唔 IGable.

另外想講講個調味架,一般來講,好多拉麵店嘅 bar 枱位都係每張個位有一 set,而咁啱我個位係冇的,要開口問先有。而,d調味料之一,係選用左七味粉,我認為有心思嘅拉麵店應該係要用一味粉,因為七味粉除左辣味,仲有其他味道,會容易破壞個味道平衡。我正正加左七味粉之後,我就覺得味道失衡,但可能係我重手左都唔定。

值得一讚係,調味架上個醬油,佢有貫徹”無化調”嘅宗旨,選用左食唔出有加味精嘅醬油,雖然個湯本身夠鹹,但我都刻意額外試左幾滴個醬油去核實呢件事,所以都值得一提。

最後,我都係清晒。順帶一提,個碗嘅設計同一蘭有類似嘅點子,碗底有一句意思類近嘅句子,大概都係話:最後一滴湯令人超滿足。不過,一蘭係比到呢個感覺我,呢道就講真冇。

整體 - 不推介。
Other Info. : 我比服務滿分,因為店員係有殷勸地招呼我,有求必應。縱使間店嘅運作有缺點,例如冇 QR code 落單,埋單要叫人來埋而唔係出去櫃檯(比較慢),同我以上提到,我個位冇調味架,全間店偏暗,全部都唔關店員事,都係店長或總公司嘅問題。
