從友人文章中得知尖東帝苑酒店中菜廳「帝苑軒」推出「順德情懷」菜式推廣,由其中菜總廚何偉成師傅掌廚,呈獻多款正宗順德名菜,引得我食指大動,便邀請友人伉儷,一同在六月底這順德菜式推廣結束之前,來「帝苑軒」一嚐這裡的順德名菜。不知是否因為天氣欠佳關係,這晚中菜廳內除了我們仨外,就只得廂房內有客人用餐,讓這需要穿過小橋流水才能來到的中菜廳倍覺寧靜清幽。在接近二十款的順德美饌中,點了三餸一湯做晚餐。先來每人一碗「大良生拆魚雲羹」($138/位),材料豐富,口感順滑的魚雲羹,味道鮮甜不腥,這感覺正宗的魚雲羹,真的很久沒喝過了。傳統手工菜「玉簪田雞腿」($288)擺盤漂亮,田雞腿粗壯多肉,肉質實而不韌,加上調味得宜,讓久未嚐到田雞滋味的我大感滿意。本是四人份量的「豉汁均安大頭菜蒸魚咀」($308),經理為我們特別改為每人一份,濃郁的豉汁為滑捋捋的魚咀添上令人垂涎的味道,雖然魚咀份量不多,饞嘴貓兒不夠盡興,也只好淺嚐輒止。跟魚咀剛剛相反,最後上桌的「原條家鄉釀節瓜」($208)份量極多,埋藏在金菇、木耳、冬菇片等蔬菜下的兩大條釀了免治豬肉的節瓜煨得軟腍入味,濃甜的茨汁味道十分討喜,而且食極都有,飽足感

雖然這天我們只食餸,沒吃飯,不過在吃過主菜後,還是叫來半份「家鄉椰蓉花生煎軟糕」($44/3粒)做甜品,煙煙韌韌的煎軟糕,裡面夾著適量的椰蓉花生餡,香甜而不過甜,把我的甜胃也滿足起來。

隨著侍應把水果送上,這頓順德晚宴才正式宣告結束,雖然胃納有限,這裡的其餘多款順德名菜好像「龍蝦大良炒鮮奶」、「家鄉原條釀鯪魚」、「砵仔雞蛋焗魚腸」、「大良薑汁燉奶」等,這次都沒能嚐到,不過我已感到相當滿足了。
