To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 日本菜時常給人精緻漂亮的感覺,有如藝術般,今次再到訪壽司之神,體驗又一時令菜式。三星漬蒸豆腐,嫩滑的豆腐中帶點辣味,令人開胃的前菜。白鱈魚精囊,好珍貴的時令食材,而質感好滑,青檸味醬汁,不錯不錯。彈牙的虎蝦配著誘人香味的黑松露魚子,印象難忘。刺身先由響螺片(左下)、目仁奈(右下)、池魚(左中)、鯖魚(右中)、鱈魚(左上)及吞拿魚腩(右上)。響螺片:師傅灑上岩鹽,食用的時候放在青檸片上擦一擦。質感非常爽口,再點豉油,清新的酸味更為分明。目仁奈:刺身味道較為淡,所以加上柚子皮、辣蘿蔔蓉等,再沾上特製酸汁,即時有所不同。池魚:質感滑身,魚味較為淡鯖魚:師傅已用姜蔥、豉油來調味,可以就這樣品嘗,質感不太似刺身,以為是弄熟了的鯖魚。鱈魚:燒一燒表面,好香,魚油慢慢滲出,好正。最後是品嘗濃味的吞拿魚腩,入口即融,沒有根。刺身接著就是4款壽司,有針魚、伊佐目、牡丹蝦及鰤魚。針魚壽司:肉質好爽口,配上蘿蔔蓉、蔥花,新鮮又不會膩。伊佐目壽司:上面一絲絲姜花點綴,魚肉爽中帶腍。牡丹蝦壽司:除了彈牙蝦肉,還有上面的蝦膏味,蝦的鮮味相當濃厚,鮮味無窮。至於鰤魚壽司肉質腍身,味道一般,印象不太深刻。隨後奉上鮮味

至於鰤魚壽司肉質腍身,味道一般,印象不太深刻。

隨後奉上鮮味魚湯,正式的日本菜是飯後才飲湯。

最後甜品是紅豆雪糕及豆腐芝士布甸,紅豆雪糕偏甜重奶味,不是北海道紅豆,有少少普通。

至於布甸質感幾滑,又有豆腐及芝士味,比例恰到好處,正。
