To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 朋友們發現食通天有一家新開的餐廳, 所以今晚大家約出來飯聚.其實聽到名字, 再看其以木為主的裝潢, 很有大自然氣息, 真是以為這是素食餐廳.枱面有刀叉及筷子, 主打亞洲美食的餐廳, 當然要提供啦.細看這家MENU, 包羅亞洲各國特有的風味.有部份是馬拉菜色呢!想當年, 跟馬來西亞的同學吃喝玩樂, SAMBAL UDANG, SAMBAL IKAN, NASI LEMAK, ASAM LAKSA, 香辣美味的菜餚, 就是我的馬拉回憶了!!!所以這晚飯聚, 對几道菜色特別有印象.全因這個酸鹹香辣的馬來西亞風味SAMBAL醬.美食呈上來了!青檸香茅雞翼配秘制森巴醬Chicken wings, lime, Lemongrass, Shrimp sambal sauce青檸香茅, 很有東南亞風味吧! 加上SAMBAL醬, 就變成馬拉風味了!!!視覺 : 金黃色的雞翼, 表面有香茅, 炸得不太燶, 不過火.嗅覺 : 把雞翼放近鼻子, 感到點點的香茅香氣.手感 : 只需一點力, 即可以餐刀把2條骨的連接位分開,           i.e.炸得剛剛好. 如果炸得過火, 骨與骨之間的連接位會變硬, 下

視覺 : 金黃色的雞翼, 表面有香茅, 炸得不太燶, 不過火.
嗅覺 : 把雞翼放近鼻子, 感到點點的香茅香氣.
手感 : 只需一點力, 即可以餐刀把2條骨的連接位分開,
          i.e.炸得剛剛好.
如果炸得過火, 骨與骨之間的連接位會變硬,
下刀就要很用力. 當然也全靠鋒利的餐刀呢!

口感 : 雞翼的肉質本身無得輸, 中間雞肉當然是滑溜,
而表面的雞皮亦唔CHARM口, 整體不太硬.
(註 : 不喜歡炸到硬掘掘的食物)

味覺 : 肉質只有一點鹹. 再加點SAMBAL醬就真是風味十足了.
未必每人都受到SAMBAL醬的酸鹹香辣,
可先試一點點, 可自行調校份量.

表面鋪滿了片片的香蕉, 火燃盡後, 在每片香蕉交叠的凹陷處, 結了一層啡色的物體!

始終燃燒的過程很快, 啡色的焦糖不太硬,
很容易舀出焦糖燉蛋.這個燉蛋頗滑溜, 似蒸水蛋,
底部亦有指定動作 - 雲呢嗱籽.
但表面的香蕉加上燒過焦糖,
香蕉比燉蛋還要甜呢!

這晚的SAMBAL菜色,
就是教我念念不忘的馬來西亞風味呢!
