上次趁郊遊,入到去石門一帶食咗一餐高水準嘅中菜,今回同郊遊無關,但同樣喺一餐高水準嘅中菜。銅鑼灣食廈Cubus,進駐得入去嘅都喺一啲中高檔餐廳,以前就光顧過其中嘅「Chez Moi」。最近,就加入新一員,喺賣精緻粵菜嘅「顏府御膳」,到訪當日都仲喺試期中。餐廳裝修都喺走中國風,但又唔會大紅大紫咁俗氣,反而透過射燈燈效,有種高雅嘅親和感。再者,樓底比一般平常嘅食廈餐廳高,加上中間一排圓枱刻意唔用,增加咗空間感,亦對時下嘅防疫有好處。最入面,仲有一個廂房,因為未有客嚟,店員都唔介意小弟入去影低幾張相。廂房內只容納一張8人圓枱,而裝修都幾骨子。除環境,枱布、餐具、杯碟都好精緻。順帶一提,茗茶每位$20,本來想點鐵觀音,但聽到有菊花,就轉而選佢,茶味真喺好清香。琥珀合桃 $20未用餐前,先來一小碟餐前小食「琥珀合桃」,店員介紹時講明喺自家製,琥珀色嘅合桃沾滿白芝麻,外表悅目,咬落十分香脆及甜蜜。另外,XO醬亦喺自家製,啲瑤柱絲大大絲,香辣而不嗆喉。菜譜真喺有啲厚,影起嚟可能唔喺咁清楚,請見諒。大致上,類別分為巧手小食、湯羹、山珍海味、魚翅、海鮮、肉類、家禽、時蔬、廚師推介、飯麵及甜點。如果唔想煩

先登場嘅焗蟹蓋其實喺餐牌中嘅小食嚟,不過,就喺一客高級嘅小食。蟹蓋唔使多介紹大家都知喺咩,篤開一睇,果然真材實料無欺場,啖啖都喺絲絲蟹肉,入口勁有蟹鮮味,除咗少少蘑菇碎碎,最得意混入啲蘿蔔絲,提升一吓口感度,面頭嘅芝士忌廉汁亦校得啱啱好。

曾經晌「潮庭」食過一道石榴雞,印象甚深,因為好功夫菜,不過,已經喺多年前嘅事。今晚晌「顏府」再會,但升級咗加入蟹肉、魚翅嘅高級板。同樣做得精緻,加一大抹蟹黃做點綴,賣相就更搶眼高貴,篤開蛋白皮,睇到內裡釀有好多蟹肉及魚翅,入口鮮甜無比,再夾雜蟹黃一齊食,真喺無得輸,以佐以鹹香濃郁嘅高湯,更喺滋味無窮。

六頭大虎蝦 $168

食鮑魚就會分幾頭幾頭,食虎蝦食到分幾頭就真喺第一次,講真,上到菜就知「六頭」真喺好大隻。呢道菜可揀頭抽煎焗或雞油花雕蒸,當然後者較為特別啲啦。隻蝦唔止大隻,蝦肉仲好爽口彈牙,個雞油花雕汁好香,襯出蝦鮮味,而當中嘅酒味香得嚟又唔嗆喉,恰到好處。此外,唔好錯過蝦頭嘅蝦膏喔,再者,賣相又再為道菜加多點評分。

慢煮牛肋排 $298

食西餐遇上慢煮就多,但中菜一樣可以慢煮,其實,呢道菜個人都覺得都幾有西菜嘅影子,尤其原條肋骨放埋一齊,有少少斧頭扒嘅感覺,亦頗有霸氣。肋排肉紋理好清晰,咬落真喺意外地咁軟腍鬆化,卻有濃濃肉香,細嚼明顯感受到肉汁豐盈,而所淋上濃郁嘅紅燒汁令肋排食起嚟更惹味,真喺想叫碗白飯呀!

蟶子皇櫻花蝦蒜香糯米飯 $148

蒜蓉蒸蟶子皇唔喺第一次食,但配上糯米飯咁有創意,就真喺第一次。蟶子皇蒸得啱啱好,既爽口,又鮮味,當然,蒜蓉嘅提味亦功不可沒;而下面嘅糯米飯口感極佳,軟糯唔黏牙,而且,最有心思喺裡面混有櫻花蝦,添了點脆脆感,唯少少挑剔喺蒜蓉下得太多,出現微微偏鹹嘅狀況。
