To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 今日我喺上環嘅一間廚師發辦日式料理用餐,真係好開心!廚師用超級新鮮既食材,每一件壽司都好驚喜!首先,頭盤就係靜岡縣嘅蕃茄同淡雪鹽,蕃茄新鮮到爆,咬一口就流出果汁,搭配淡淡嘅鹽味,真係好味。跟住就係高湯黑梅貝,貝肉鮮甜!慢煮鴨胸都好好味!鴨胸肉質嫩滑,外內軟,非常美味!然後到美味嘅壽司啦!有熊本雅鯛,淋上竹炭鹽,口感層次分明!再嚟就係北海道墨烏賊,青檸同日本鹽嘅搭配,令墨烏賊嘅鮮味更加突出!接著係北海道帆立貝,配上綠色柚子皮,味道清新,真係好適合秋天食。大芬縣深海池魚同岩手縣赤貝都係唔錯,尤其岩手赤貝,肉質鮮甜,新鮮又彈牙!紫蘇花都好特別,為整個餐盤增添咗靚麗嘅色彩。神奈村梳子魚炙燒後嘅香氣令人留連忘返,期間限定秋刀魚配薑蔥,味道正,簡直係秋天嘅味道。北海道鰤魚用豉油同芝麻醃製,真係好有滋味,配飯食都好正。北海道銀鱈魚配上柚子胡椒,味道清新,魚腩滑溜,食完每一口都會想再嚐多啲。鹿兒島中吞拿魚腩亦都唔差,肉質夠肥,口感好滑。最後,北海道牡丹蝦用燒香嘅蝦膏,令整道菜更加豐富,最後嘅甜品宇治抹茶奶凍,加上日本黑豆,真係完美既一餐。今餐食得真係好滿足!
