這間拉麵店連續4年獲得日本米芝蓮推介, 來頭唔細餐廳環境比較昏暗, 裝飾感覺幾高雅其中兩張枱還有棵樹在枱上, 明顯係行高級路線, 環境比較昏暗Menu有期間限定既麵, 有湯麵, 沾麵, 定食, 小食, 甜品有雪葩期間限定既廣島蠔豚鴨沾麵 ($168)沾麵份量好似好多, 還有一塊紫菜, 旁邊有沾麵湯, 炸廣島蠔, 糖心蛋, 還有大量蔥和筍在底部, 還有炸蠔既醬汁沾麵既麵條是粗麵, 過左冷河, 係凍既, 麵條表面可以看到有些裸粒湯很濃很"杰", 入面很多材料, 還有2粒豚肉, 豚肉比較嚡, 湯豚味比較重, 鴨味我食唔出, 唔會太咸因為湯比較"杰", 所以麵條掛湯掛得很好, 每一啖都食到湯味, 而且麵條煙韌好食炸廣島蠔有2隻, 跟旁邊的蛋比較看到size都算大, 蠔炸得很酥脆, 而且炸粉很薄, 蠔味很重, 非常好吃自家製蟹肉薯餅 ($68)蟹肉薯餅有3粒, 還有沙律和醬汁薯餅炸得很酥脆, 除了薯蓉還有薯仔粒和蟹肉蟹肉份量很多, 接近一半都是蟹肉, 很足料, 很好吃總結, 最好食既係炸廣島蠔, 然後係蟹肉薯餅, 真係做得好出色當然沾麵都做得很好, 佢既麵係自家制, 證明左佢好重視麵既質素, 一

沾麵份量好似好多, 還有一塊紫菜, 旁邊有沾麵湯, 炸廣島蠔, 糖心蛋, 還有大量蔥和筍在底部, 還有炸蠔既醬汁
沾麵既麵條是粗麵, 過左冷河, 係凍既, 麵條表面可以看到有些裸粒

蟹肉薯餅有3粒, 還有沙律和醬汁
薯餅炸得很酥脆, 除了薯蓉還有薯仔粒和蟹肉
蟹肉份量很多, 接近一半都是蟹肉, 很足料, 很好吃

總結, 最好食既係炸廣島蠔, 然後係蟹肉薯餅, 真係做得好出色
當然沾麵都做得很好, 佢既麵係自家制, 證明左佢好重視麵既質素, 一碗好食既沾麵有幾個重點
第一, 麵條要煙韌
第二, 麵要凍, 湯要熱, 如果要吃熱既麵不如吃湯麵, 吃湯麵既時候, 第一啖麵和最後一啖麵口感會唔一樣, 因為麵在湯裏時間久了會變淋, 沾麵, 湯和麵分開, 麵過冷河可以保持麵條煙韌, 冷麵沾熱湯, 口感比湯麵豐富
第三, 麵條掛湯力和湯頭味道要平行, 掛湯力強, 湯頭就不能太咸, 掛湯力弱, 湯頭味道要重, 這款沾麵, 3樣都做到所以唔錯
不過性價比就差好多, 日本店一碗拉麵都係賣1000yen左右, 即是HK$80左右, 香港賣$168加1服務費$184.8, 比日本貴了6成, 完全唔值
想食既朋友還是等開關後去東京吃吧
