先嘗象拔蚌,好易咬開,但又不失爽甜口感,簡單點岩鹽,更能引出鮮味。是日造訪,剛巧嘗到稀有嘅石川縣荒魚,魚肉好腍,帶微微甜香,好特別!至於磯之雪昆布淮山卷,以白昆布包住切絲淮山,昆布薄如紙,味道清爽。

牡丹蝦先用昆布漬過,上面再有蝦清湯做嘅啫喱、蝦籽+蝦膏做嘅蝦油,唔使剝殼,一口氣就食曬成隻蝦嘅精華部位!

用上日本優質嘅明石八爪魚,以蘿蔔漬約7-10日,軟化+熟成八爪魚肉。食上口外層呈啫喱狀,內裡煙韌,師傅仲加咗少少柚子皮,襯托八爪魚肉嘅鮮味。

全年產嘅白蝦,膠質好重,店家放了足料岩鹽及柚子皮,清新得嚟又唔寡。

師傅用上矜貴嘅新子魚,據說一年只有一個月可捕捉到,價格同海膽差不多!師傅指一件壽司就用上三條新子魚,師傅要細心去骨風乾,仲要加糖鹽醋漬,工序繁多!魚肉結實,極濃郁,鮮味令人難忘!屬於江戶前嘅做法。
