來自澳門嘅「黃枝記」,係澳門一家老字號嘅粥麵店,主打古法製作嘅手工竹昇麵。美味嘅貼士來自於師傅坐喺粗竹竿上,反覆打壓兩個鐘,再加入全蛋,所以打出嚟嘅麵糰充滿韌性。今日同媽咪食晏,佢提議嚟呢度食,話啲麵好好味㗎喎,雖然我唔鍾意食麵,不過試吓囉,邊個話嚟呢度一定要食麵㗎呢?麵醬豬軟骨撈麵($38)媽咪揀咗佢最鍾意嘅撈麵,一絲絲幼麵入口蛋香四溢,麵打得夠爽所以食起嚟夠爽脆,有少少al dente感覺,口感非常好,而且冇鹼水味道,唔鍾意食麵嘅我都好鍾意食呢個麵;碗上嘅豬軟骨份量可接受,軟骨上黐住頗多豬肉,幸好煮得幾入味及軟腍,一咬就骨肉分離,將麵醬撈落麵一齊食非常惹味,食飽都唔會覺得好膩,果然係招牌菜!黯然叉燒飯($45)貴價嘅黯然叉燒飯就冇錢食喇,呢個平平哋我就試吓啦!用一隻公雞碗載住4片叉燒及一隻煎蛋,豉油另上;叉燒唔係想像中嗰款紅色叉燒,而係喺叉燒表面加上砂糖後再火炙,顏色比較深,每塊叉燒邊都有火炙過嘅痕跡,食落有輕微嘅火炙味道,肥瘦適中而且有豬肉味道,其實似豬頸肉多過叉燒,亦都幾軟腍;煎蛋冇流心嘅效果,否則撈埋一齊食真係會好好多;豉油偏甜但冇乜鹹味,否則就會蓋過叉燒嘅火炙味道喇銅鑼灣以
