踏入十月,秋天時分,又是吃大閘蟹及的時候,原隻清蒸的大閘蟹固然吸引,但有時候不想自己動手拆蟹,也就可以吃蟹粉菜式。蟹粉是指蟹肉、蟹膏及軟組織等,一隻大閘蟹可拆出來的蟹粉並不多,大約只是原隻蟹的四分之一重量,所以要炮製出一道黃澄澄的蟹粉菜式,就已經要用多隻大閘蟹。這夜來到沙田的龍門客棧,也吃了好幾款蟹粉菜式。但先來是魚籽燻雙蛋,每隻$38,上次來也吃過,燻雙蛋的蛋黃位置再釀上蛋,並加上少許魚子醬作點綴,燻味跟上次吃的都較淡,可以再濃郁更好。八仙腐皮卷,金黃色的腐皮包著木耳、蘿蔔、芹菜等餡料,包捲得緊緻不鬆散,香脆可口,口感頗豐富。巴蜀口水雞,個人喜愛吃辣,帶吃這個菜式很適合。以自家製的辣汁來醃製雞肉,肉質也嫩滑而不鬆散,麻辣度不高,微辣刺激胃口,對我來說辣度可以再高一點。南京醬鴨,鴨肉皮厚不油膩,肉質也軟腍,沾上特別的醬汁來吃,鹹鹹甜甜的,也還好。在四款蟹粉菜式前,也先來喝個黃魚湯,湯頭呈現乳白色的,味道很鮮,亦不會很腥。平日常吃的都是蟹粉小籠包,所以我們就點這個蟹粉煎鍋貼,$128。鍋貼底部煎得金黃色的,口感香脆,入口不太油膩。内裡豬肉餡料混入不少蟹粉,滲出橙黃色的蟹油,味道很鮮。只是

巴蜀口水雞,個人喜愛吃辣,帶吃這個菜式很適合。以自家製的辣汁來醃製雞肉,肉質也嫩滑而不鬆散,麻辣度不高,微辣刺激胃口,對我來說辣度可以再高一點。

平日常吃的都是蟹粉小籠包,所以我們就點這個蟹粉煎鍋貼,$128。鍋貼底部煎得金黃色的,口感香脆,入口不太油膩。内裡豬肉餡料混入不少蟹粉,滲出橙黃色的蟹油,味道很鮮。只是放久了一點,所以尚欠一點熱度,若熱立即入口的話,應該會更好吃。

蟹粉鍋巴,香脆的鍋巴入釀滿蟹粉、粟米、蘿蔔粒等混成的餡料,香層鍋巴十分香脆,口感豐富,內裡滲著蟹粉汁,味道挺不錯。可能個人較愛吃香口脆口的食物,所以覺得這個比鍋貼更吸引。

蟹粉炒年糕,$198,吃蟹粉菜,我都愛吃這個炒年糕,因為本身年糕沒有甚麼味道,所以撈上蟹粉汁吃時,更能突顯蟹粉的鮮味。年糕腍身但也有點咬口,個人剛喜愛多嚼勁一點。

蟹粉燴明珠,明珠是指冬瓜粒,半透明的冬瓜粒吸滿蟹粉醬汁,一淡一濃的味道互相融合,同樣的可把蟹粉味道突出。

再來椒鹽小黃魚,魚炸得透徹亦不錯,十分酥香,外脆內嫩,魚肉不會霉腍,吃下味道帶鮮,椒鹽味道不過鹹,又不感油膩。

最後甜品是拔絲士多啤梨,士多啤梨表面包著一層脆糖漿,外甜內酸,上面鋪滿了糾纏不清的糖絲,吃點也很甜溜。

這夜吃的只是一部份的蟹粉菜式,餐牌上還有其他可選。吃過蟹粉,也是時候自己動手拆原隻的大閘蟹來吃了。
